I have some eggs I bought at the store a little over a week or so again. The expiration date says to use them today. However, I can't use THAT many eggs in such a short time. How long are eggs good passed the expiration date?

Usually eggs stay good for about a week after the expiration date. But if you want to test them, fill a glass about 3/4 of the way up with water and put an egg in it. If it floats a little bit at the bottom, it is still pretty fresh. If it floats about halfway up, they are getting old and I will usually hard cook them at this point(somewhat older eggs make perfect hard cooked eggs because they are easy to peel.) If the egg floats all the way to the top, they need to be thrown out.

Good tip and one I'd never heard of either. Luckily, I don't buy store eggs anymore as a farmer down the way sells them and I know those are fresh! LOL.

Noctowl is correct. As eggs deteriorate, they produce gasses, which can cause them to float. That is why the more they float, the older they are.

On the contrary, if the egg is too fresh, it will have no gasses built up on the inside. This can be a problem if you make boiled eggs as they are easier to peel when they are a big older and the gasses help separate the shell from the egg.

This was a very good idea. I think, actually, that I need to check
the carton I have in the fridge before I buy groceries tomorrow.

On the subject of eggs, does anyone else find that sometimes you have a few eggs that won't come out of the carton and break when you try to pick them up? Any ideas on why this might be happening?

my guess would be that there was maybe a broken egg in the carton, it got relaced, the egg goo from the previous one dried on the replacement and got it stuck.

If you need to use up those eggs, make an omelt or some deviled eggs.

Thanks for the tip. I had never heard about putting them in a glass of water and testing them before. I always just threw them away.

Check the date on the box - is it a sell by date or a expiration date. The glass of water trick is a great way for testing eggs. I need to remember that but eggs never last that long in this house.

I have let all my friends and family know this tip after reading it in a cookbook. I usually tell everyone that "eggs can't swim". lol

These are exactly the eggs we used to boil and have for eye dyeing! I had a carton that expired on April 3, so I just saved them. I did the water test, and they didn't sink (but didn't float on the top, either)
This is a great tip, and is the best way to test them.

These are great tips, neither of which I had heard before. I'm always amazed to learn these little tricks that other people know. I wonder where they learned them and what tricks I know that others don't! :)

I had never heard that tip before. I can't imagine why, as old as I am, or feel, lately. I'll definitely try that on the next ones I have that are close to the expiration date. ;)

I don't know if it's actually necessary or not, but when I have an
egg like that, I assume it may have a crack, and leaked... and then
I don't want to use it because of possible bacteria, so I just pitch it.

Katherina, I toss the egg that was cracked or busted as you are correct that it could have bacteria. However, I feel that I can still save those others which have all the egg stuff on them and wash them.

If you can't use a full carton soon enough before it might expires. You could spray an ice cube tray and place one egg in each space and freeze them and them pop them int a baggie or plastic bag for later use in recipes or omlets or frying separately after thawing.

Wow, you gals sure have some great ideas! I'll have to start a notebook
with all these fabulous tips! This one sounds like something I could
definitely use... I wasn't aware that eggs can be frozen, even when
out of the shell like this.

Eggs in my house don't last that long either we go through about 2 doz a week, we have an egg farm just up the road and they ARE fresh! LOL
Some time, not just on eggs you have to see if it's "use by" date or an "best by" date there is a difference.
I like the extra hints, ta.
