We are going to be serving ham like many will be for Easter. I would just looking for some new ideas on what to serve *with* the ham. We tend to get stuck in a rut (potato salad, baked beans, etc) Any ideas of some casseroles, perhaps, or anything else?

I personally like my ham fried with red-eyed gravy and mashed potatoes and either green beans or green bean casserole. Other things that go well with ham are yams and you could also make a broccoli and rice casserole. I also made a spinach gratin last Christmas. I hope you enjoy your holiday!

Here are a couple of recipes that might work for you and some additional ideas.


Green Bean Casserole

1 can French style green beans
1 can cream of celery soup
1/2 cup sour cream
1/2 cup chopped onion
1 can shoe peg or white whole kernel corn
1/2 cup chopped celery
1 1/2 packs crushed Ritz crackers
1 stick melted butter

Spray casserole dish with nonstick cooking spray. Drain green beans and place in dish. Mix together cream of celery soup, sour cream, chopped onion, corn (drained) and chopped celery. Pour this mixture over the green beans. Place crushed crackers on top and pour melted butter over crackers. Bake 35 minutes at 350 degrees or till brown.



Cinnamon Mashed Sweet Potatoes

Place 1 (29-ounce) can drained sweet potatoes in light syrup in an 8 x 8" baking dish cover and microwave on HIGH 5 to 7 minutes or till hot. Add 1/4 teaspoon each cinnamon, salt and pepper. Mash with a potato masher.

You could also do:

Steamed fresh vegetables
Salad
Cornbread
Pies and cookies for dessert

My family usually has scalloped potatoes. This year I am making my Cracker Barrel Hashbrown casserole (recipe here on MM).

I am looking for a good recipe for sweet glazed carrots to go with it too.

My DH loves raisin sauce with his ham.

Here is a good glazed carrot recipe I like:

1 1/2 lb fresh carrots
1/3 cup brown sugar, packed
1/2 tsp salt
1/2 tsp grated orange peel
2 tbsp butter OR margarine

Prepare and cook carrots cut into lengthwise strips.(Heat 1" salted water to boiling and add carrots. Cover and heat to boiling and cook about 12 to 15 minutes and drain). In a large skillet cook and stir brown sugar,salt, orange peel and butter till bubbly. Add carrot strips and cook over low heat stirring occasionally about 5 minutes or till carrots are glazed and heated all the way. Makes about 6 servings

We tend to serve a rice, carrots and peas casserole as well as the standard pineapple which everyone always loves!

Is this a combination dish of preas, carrots and rice?:confused: Care to share your recipe? And how do you serve the pineapple, sounds good!

I usually serve (and will this year most likely) homemade mac and cheese with ham... and also candied sweet potatoes. I *may* do stuffing this year instead of the mac and cheese. I sometimes make a baked pineapple casserole, and always have a great dessert with the meal. (Still need to decide what that will be for Sunday!)

I absolutely will. :) Here ya go...

1 can (15-16 oz) crushed pineapple
1/2 cup sugar
2 eggs
2 tablespoons cornstarch

Mix all ingredients well and pour into 1 quart casserole.
Sprinkle with cinnamon and bake at 350 degrees for
35 to 40 minutes. Delicious with baked ham.

I may try cutting this in half this year since my daughter
won't be eating any of it. I'd think a small can of crushed
pineapple and half of everything else will work just fine.

Here's another pineapple casserole, and it's a hit every place I take it. It doesn't sound like it would be good, but it's YUMMY!

2 large cans pineapple chunks, drained
1/2 cup flour (either kind will work)
1/2 cup sugar
2 cups shredded cheddar cheese
1 roll of Ritz crackers, crushed
1 stick of butter/margarine

Drain the pineapple and pour them into the bottom of a baking dish. Mix the flour and sugar together and spread evenly over the pineapple. Crush the crackers and sprinkle them on top. Put the cheese on top. Cut the butter into chunks and dot over the top. Bake in a 350F oven until cheese is melted and bubbly (about 25 minutes).

I hope you all try it. I'm sure you'll enjoy it as much as we do!

We are having a spiral sliced ham on Easter. I'll also be serving baked yams/baked potatoes, pickled beets, Portuguese Easter bread and homemade coleslaw. And there will be plenty of deviled eggs, I'm sure!!

I like the fact that I won't have to deal with cooking any hot vegetables for the meal. It will be much easier to just serve cold sides, except for the baked yams/potatoes.

We are having spiral sliced ham also. Dh wants salad & baked beans. Think I will also add some kind of potatoes not sure on the dessert yet. Will also add some rolls as my family is bread eaters but I'm not a big bread eater never have. THe baked yams/potatoes sound good may go that route.Any good baked yam/potatoes recipes. The pineapple casseroles sound good also.

We do spring lamb for Easter dinner but many of the same veggies as we do with ham. One thing we added last year that was great was an asparagus dish.

Tablespoon each of olive oil, balsamic and white wine mixed with 3 gloves of chopped up garlic, coarse salt, pepper, and herbs de Provence. Put asparagus in a large baking pan and drench it with the above mixture. Let it marinate for a couple of hours. Then sprinkly lotss of romano or parmesan ontop and put it in a hot oven (400) for ten minutes. It's great!

Sweetnell,we like this sweet potato dish, the alcohol cooks out so you only end up with the flavor but they are good!The dish is from The Old Talbott Tavern in Bardstown, KY

Kentucky Bourbon Sweet Potatoes

3 cans (1 lb 2 oz saize) vacuum packed sweet potatoes
1 cup sugar
1/3 cup bourbon
1/2 cup margarine
1/2 tsp vanilla
2 cups miniature marshmallows

Turn sweet potatoes into large saucepan. Cook over medium heat, stirring frequently till heated through. Preheat oven to 350 degrees. Mash sweet potatoes and add sugar, bourbon, margarine and vanilla and beat till well blended. Turn into a 2 qt shallow baking dish and sprinkle with marshmallows over the top. Bake uncovered 30 minutes or till marshmallows are golden. 9 servings

We have several we like, but the above is my favorite; here are some of the others:

Sweet Potato and Marshmallow Casserole

2 cups cookedmashed sweet potatoes
1/4 cup melted margarine
1/4 cup light or dark corn syrup
1/4 cup orange juice
2 tbsp milk
1/4 tsp salt
1/4 tsp ground nutmeg
miniature marshmallows

Combine sweet potatoes, margarine, corn syrup, orange juice, milk, salt, and nutmeg and mix well. Spoon into a greased 1 qt casserole and arrange marshmallows on top. Bake at 375 degrees for 25 to 30 minutes or till casserole is bubbly and marshmallows are lightly browned. 6 servings


Cranberry Sweet Potato Bake

2 cans (15 oz each) cut sweet potatoes, drained
1 cup fresh or frozen cranberries
1/4 cup coarsely chopped pecans
1/2 cup orange marmalade, warmed
Place sweet potatoes in a greased 11 x 7 2" baking dish. Sprinkle with cranberries and pecans and spoon marmalade over top. Cover andbake at 350 degrees for 25 to 30 minutes or till heated through. 4 - 6 servings


Sweet Potato Casserole

3 cups sweet potatoes, about 4 good size ones
1/2 cup sugar
1/2 cup butter
2 eggs, beaten
1 tsp vanilla
1/3 cup milk

TOPPING

1/3 cup melted butter
1 cup light brown sugar
1/2 cup flour
1 cup chopped peans

Boil and mash potaotes. Mix in sugar, butter, eggs, vanilla and milk. Put in 13 x 9" baking dish.
TOPPING Melt butter and slowly add to remaining ingredients just till crumbly. Sprinkle on top of potato mixture and bake 25 minutes at 350 degrees.(If you have any melted butter left pour it over the top.)

Hope you like one of these; they are all good!

We're having our Easter dinner tonight in combination with celebrating our younger daughter's birthday. They all like homemade mac and cheese with ham. I also made a dish of potato filling and we'll have corn and maybe another veggie. I know, it's a lot of carbs but it's a holiday so we don't worry too much about carbs today.

I usually make Peppery Scalloped Potatoes with ham (a real favorite of mine and DS) and try to have either a green vegetable or salad go with it.

Pfaffshirl, I enjoyed the comment about not thinking about carbs on a holiday. My usual carb indulgence is some kind of warm rolls -- just love 'em!

This is a recipe I got originally from Quick Cooking when I was looking around for something different. I changed a few things from the original recipe. I liked it, but since DH doesn't like coconut he didn't, but I think his problem with it was purely the coconut!

1 1/2 lb sweet potatoes
1/3 cup crushed pineapple
2 tbsp melted margarine
1 tbsp orange juice
2 egg whites, beaten
1/4 tsp ground mace
1/8 tsp ground ginger
1/ cup flaked coconut
1/3 cup pecans, finely chopped
2 gbsp brown sugar

Put potatoes into a Dutch oven and cover with water. Bring to a boil, reduce heat, cover and cook about 30 minutes or till tender. Drain and cool. Peel potatoes and then mash in a bowl. Add pineapple, margarine, orange juice, egg, mace and ginger. Put into a greased 11 x 7" baking dish. Bake uncovered at 400 degrees for 20 to 30 mintes or till heated. Combine coconut, pecans and brown sugar and sprinkle over the top. Bake 10 minutes more or till topping is slightly browned. 6 ervings

This sounds delicious!! My husband isn't a bit fan of coconut, either, so I might have to do some convincing before he would even try it. It looks like a very fancy version of sweet potato casserole!
