2 egg whites
2 cups biscuit mix
1/3 cup sugar
2/3 cup milk
2 tsp grated lemon zest
1 and 1/2 cups frozen blueberries, thawed, rinsed & drained
2/3 cup confectioner's sugar
1 tbsp lemon juice

Combine egg, biscuit mix, sugar, milk and lemon zest and mix well. Gently fold in blueberries. Pour into a lightly greased 9" round pan. Bake at 400 degrees for 20 to 25 minutes. Combine confectioner's sugar and lemon juice to make glaze. Drizzle over cake before serving.
