View Full Version : Homemade Marshmallows

2 tbsp unflavored gelatin
1/4 cup of water
2 cups of white sugar
1 cup of water
1 tsp vanilla
3/4 cup of mixed cornstarch and powdered sugar (1/4 cup of cornstarch, 1/2 cup of powdered sugar)

Soak the gelatin in 1/4 of a cup of cold water in a small bowl and set aside to swell for 10 minutes. In a large saucepan pour the sugar and second measure of water. Gently dissolve the sugar over a low heat stirring constantly. Add the swollen gelatin and dissolve. Raise the temperature and bring to the boil. Boil steadily but not vigorously for 15 minutes without stirring. Remove from the heat and allow to cool till lukewarm. Add the vanilla extract and whisk the mixture with an electric mixer till very thick and white. Rinse an 8" pan under water and pour the marshmallow mixture into the wet tin. Refrigerate till set. Cut into squares and roll in mixed cornstarch and icing sugar.

** To color the marshmallows add a couple of drops of food coloring. **

This sounds like a great project to do with the kiddos! Are they very sticky when you are making them?

For some reason I never even thought you could make marshmallows from home. My boys would love doing this. Thank you for posting this. We have spring break next week and was looking for some fun things to do with the boys. I might just try this with them next week.

Just slightly when you cut them before you roll them in the combination cornstarch and icing sugar, but not bad. I also run my knife under HOT running water after every couple cuts.

Hot water is a great suggestion. Whenever I cook with the kids I tend to have bowls of warm water hanging around, you know, sort of like finger bowls! :D
