2 quarts white wine vinegar
8 bright orange habanera peppers
1 1/2 cups sugar
1 clove minced garlic

Stem and puree the peppers (make sure you wear disposable plastic gloves). Add puree to white wine vinegar and simmer about 60 minutes. Strain and add sugar and garlic andsimmer till syrupy;about 30 minutes. Makes 2-3 cups sauce.
