Does anyone have any good asparagus recipes? I like it, but its bland to me on its own. Looking for ideas of ways to spice it up or perk it up.

I hope others have some recipes for you. I am not a fan of asparagus. I do make a frittata with asparagus, but that is about it. I think the recipe is on MM somewhere.

I usually just sautee it in some garlic and olive oil then sprinkle some dried basil and squeeze some lemon juice over the top. Other than steaming it, or using it as an ingredient in salads or omletes, I don't know how else to prepare it.

I usually just steam my fresh asparagus or just heat up a can, so as far as something really simple I really don't have anything like that. But I do have a few recipes to use asparagus as an ingredient in that are pretty good.
Here is a recipe for a Asparagus Souffle that is good
1 tbsp butter
1 tbsp flour
2/3 cup evaporated milk
1/2 lb velveeta cheese
3 1/2 cups asparagus(from a can)
3 eggs
1/2 cup blanched almonds
In a double boiler make a sauce with the butter,flour and the evaporated milk. Add the cheese and cook till melted and set aside. Cut each spear o asparagus into 3 pieces and drain thoroughly. Add well beaten egs to sauce and fold in asparagus and almonds/ Pour into a greased casserole and bake at 325 degrees about 20 to 30 minutes. Serve immediately. Serves 6

The simplest Italian way to prepare asparagus is to steam them, lay them on a warm plate, then stick a couple of fried eggs on top and a good sprinkle of grated parmesan cheese.
Five minutes, and everybody loves them.
(If you use fresh asparagus, wash them well and just snap the white ends off - they'll snap right where they're supposed to, where the hard part starts. That way you can eat the whole thing.)

I love it oven roasted with a little olive oil and ksoher salt sprinkled on it. It really is simple and brings out the flavor. I am the only one in my immediate family that likes it. There is a brother and a sister that liked it also growing up. My brother and I are probably the fondest.

I either steam mine or grill it with a little EVOO and minced garlic.
I am going to write to one of my past neighbors to ask her if she would give me her great dip recipe for serving along with steamed asparagus. It is sooo good!
I will post it if she gets back to me with it.

Garlicky Pan Roasted Asparagus
1 pound fresh asparagus, trimmed and washed
2 tbsp olive oil
2 tsp garlic, minced
kosher salt
fresh cracked peppercorns
balsamic vinegar
Heat the olive oil and garlic in a wide oven proof saute pan just till the garlic starts to bubble. Add the asparagus and toss to coat. Season with salt and pepper and place in the oven about 10 minutes till it is crisp tender. Remove from oven and plate. Drizzle with a bit of the balsamic vinegar and serve.

Okay I've been digging through some old recipes that I haven't used in awhile, but since they are ones I kept it HAD to be good ; otherwise I wouldn't still have it! LOL
Here is : Asparagus Soup
3 cups chicken broth
2 cups asparagus, cooked
2 cups asparagus water
2 cups milk
4 tbsp butter
4 tbsp flour
1 onion, chopped
salt & pepper to taste
Cut the tips off the cooked asparagus and set those aside. Combine the rest of the asparagus cut into pieces with onion,chicken broth and asparagus water. Cook about 10 minutes and then strain this. Melt butter and stir in the flour and blend. Add milk and salt and pepper and cook a few minutes. Add the strained broth, asparagus tips and cook about 5 minutes and serve.

Asparagus Tomato Salad
1 lb fresh asparagus, trimmed and cut into 1" pieces
1 small zucchini, halved and cut into 1/4" slices
1 cup grape tomaotes
1/4 cup sliced green onions
1/4 cup minced fresh parsley
3 tbsp olive oil
2 tbsp red wine vinegar
1 garlic clove, minced
1/4 tsp seasoned salt
1/4 tsp Dijon mustard
1/4 cup shredded Parmesan cheese
2 tbsp sunflower kernels, toasted
Put asparagus and zucchini in a steamer basket and put in a pan over 1" of water. Bring to a boil and cover and steam about 2 minutes. Rinse in cold water. In a large bowl combine asparagus, zucchini, tomatoes, onions and parsley. In a small bowl whisk the oil, vinegar, garlic, seasoned salt and mustard. Pour over asparagus mixture and toss to coat. Sprinkle with parmesan and sunflower kernels. 6 servings

Asparagus Swiss Quiche
This recipe is from Taste of Home
10 slices baon, diced
1/2 cup chopped onion
1 pound fresh asparagus, trimmed
1 cup shredded Swiss cheese
1 tbsp all purpose flour
1/4 tsp salt
1/4 tsp pepper
1 9" unbaked pastry shell
3 eggs
1/2 cup FF half & half
In a skillet, cook bacon over medium heat till crisp. Drain cooked baon on paper towels reserving 1 tablespoon drippings. In the drippings, saute onion till brown and drain.Cut eight asparagus spears into 4" long spears for garnish. Cut remaining asparagus into 1" pieces. In a saucepan, cook all of the asparagus in a small amount of boiling water till crisp tender and drain.In a bowl, toss the bacon, onion, asparagus pieces, cheese, flour, salt and pepper. Pour into pastry shell. In a bowl, beat eggs and cream and pour over bacon mixture. Top with asparagus spears. Bake at 400 degrees for 30 to 35 minutes or till a knife inserted near the center comes out clean and crust is golden brown. Let stand for 10 minutes before cutting. 6 servings.

Fresh Asparagus (Quick & Easy)
1 pound fresh asparagus
1 tsp kosher salt
1/2 tsp onion powder
1/2 tsp garlic powder
1 tbsp lemon juice
1 tbsp butter, cut into 8 pieces
Trim root ends from asparagus spears and then cut remaining pieces into 2 to 3" lengths. Place in microwave safe bowl with a lid and sprinkle with kosher salt, onion powder, and garlic powder. Pour in the lemon juice and dot with the butter. Cover with lid and microwave on HIGH 2 to 3 minutes. Stir to mix seasonings. Cook another 2 to 3 minutes till asparagus is tender. 4 servings

My family likes steamed asparagrus with a white sauce gravy on top. I make it on side and everyone can add the amount they like. I prefer it steamed with salt, pepper and a bit of butter.

Baked with some olive oil is the way I like it. It's fast in a hot oven and almost tastes grilled. We had it twice this week lol. Love the baby asparagus.
I usaully do the oven or grill with the Evo &garlic but it is also good if you steam it until tender crisp and then marinate in a good Italian gressing. Sometimes when I oven bake it I throw some bread crumbs and grated cheese on top.

Here's another good one!
Asparagus Quiche
1 unbaked 9" pie shell
1/2 lb fresh asparagus, trimmed
2 green onions, sliced thin
1 tbsp all purpose flour
2 cups swiss cheese, shredded
6 egg whites, beaten
1 cup fat free evaporated milk
1/4 tsp basil
1/2 tsp cayenne pepper
Bake the crust at 425 degrees for 7 minutes. Remove from the oven and set aside. Cook the asparagus spears in a small amount of water till tender. Drain and cool. Reserve 3 spears for garnish and slice remaining spears into 1/2" pieces. Toss together asparagus, onions and flour. Spread into crust and sprinkle with cheese. Whisk egg whites, evaporated milk, basil and cayenne pepper together and pour into crust. Bake at 325 degrees for about 25 minutes. Split reserved asparagus spears lengthwise and arrange on top. Bake 5 to 10 minutes more or till knife inserted in center tests clean. Let stand 10 minutes before cutting. 6 servings

This recipe is a casserole and just has asparagus in it, but it is good. I haven't made it in a long time, but came across it in my file.
Shrimp & Asparagus Casserole
1/4 cup onion, chopped
2 tbsp margarine
2 cans (10.75 oz each) cream of mushroom soup, undiluted1 cup milk
1 tsp lemon juice
2 cups cooked cubed shrimp
1 box (10 oz) frozen asparagus, cooked & drained
1 pkg. (6 oz) frozen puff pastry shells, baked
In a skillet saute onion in margarine till tender. Add soup and milk and heat slowly stirring occasionally. Bring to a boil and add lemon juice, shrimp and asparagus. Heat, stirring often and serve in puff pastry shells Makes 6 servings

Found another one in my file. This is one when the boys were small they would eat rather well, the asparagus kind of hid in it! LOL
Rice-Asparagus Casserole
1/2 stick ,argarine
1/2 cup slivered almonds
1 cup cooked rice
1 10 3/4 oz can cream of mushroom soup
1/2 cup milk
1 15 oz can asparagus
1 cup grated sharp cheese
1 cup corn flakes
Melt margarine in a csserole. Add almonds and return to oven and toast almonds lightly in margarine. Add rice and mix well. Combine soup and milk and pour over rice mixture but do not mix. Lay asparagus on top and gently press down into the soup. Top with chese and with crushed corn flakes. Bake at 300 degrees just till bubbly. Serves 4

Hot Asparagus Egg Salad
4 Kaiser rolls
1 package (0.9 oz) Hollandaise sauce mix
1 tsp cornstarch
1 1/4 cups water
1 tsp lemon juice
2 cups fresh asparagus pieces, cooked, drained OR 1 package (10 oz) frozen asparagus cuts, cooked, drained
1/2 cup chopped lean cooked ham
1 can (4 oz) sliced mushrooms, drained
4 hardcooked eggs, sliced
Cut 1/2 off tops of rolls. From the bottom piece, remove inside crumb, leaving 1/2" border on bottom and sides. Place rolls and tops on baking sheet in preheated 400 degree oven till crisp and lightly browned about 6 to 8 minutes.
Empty sauce mix into medium saucepan. Stir in cornstarch. Slowly stir in water and blend till smooth. Cook over medium heat stirring constantly till mixture boils. Remove from heat and stir in lemon juice.Stir in asparagus, ham and mushrooms. Gently fold in eggs. Cook over low heat just till heated through about 2 or 3 Minutes. Place rolls on serving plates and fill each with about 1 cup of mixture. Makes 4 servings.

This recipe was in the April BH&G nmagazine; tried it and really liked it so thought someone else might also!
1 1/2 lb. fresh asparagus spears
3 cloves garlic, thinly sliced
3 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
Preheat oven to 450 degrees. Snap off and throw away woody bases from asparagus. Out asparagus and garlic into a 15 x 10 x 1" baking dish. Drizzle with oil and sprinkle with salt & pepper. Toss to coat. Roast about 10 minutes or till crisp tender. Serve. 6 servings

German Asparagus
1 bunch asparagus, cut 1/2" off the ends
2 tbsp olive oil
1/2 tsp kosher salt
1/2 small onion, finely diced
bacon slices, uncooked
Drizzle olive oil on asparagus and toss with kosher salt. Place in greased baking pan. Sprinkle onion on top of asparagus. Top with slices of uncooked bacon (to cover the asparagus). Bake at 350 degrees till the bacon crips and the asparagus is tender.

Here is one from David's Bistro in Des Plaines, Illinois. I haven't had this one, but plan on trying it with some fresh asparagus as soon as it beomes available; sounds good!
1 lb. fresh asparagus spears
2 tbsp bottled Italian salad dressing
salt
black pepper
Balsamic Vinaigrette **
8 cups mixed baby salad greens
1/4 cup snipped pitted whole dates
4 oz crumbled goat cheese
1/4 cup pecan pieces, toasted
1 large tomato, seeded and chopped
Snap off woody ends from asparagus. Cut asparagus into 2 to 3" pieces. Place a steamer basket in a large saucepan. Add water to just below bottom of basket. Bring water to boiling. Evenly arrange fresh asparagus in steamer basket. Cover and reduce heat, steam for 2 minutes. Remove. Arrange asparagus in a baking pan. Drizzle Italian dressing over asparagus and season with salt and pepper. Broil asparagus 4" from heat for 2 to 3 minutes or till lightly browned. Set asparagus aside to cool. Prepare the **Balsamic Vinaigrette.In a food processor or blender combine 1/4 cup balsamic vinegar, 2 tbsp packed brown sugar, 1 clove garlic,1/4 tsp kosher salt or sea salt and 1/4 tsp pepper. Cover and process till smooth. With processor running gradually add 1/2 cup olive oil till combined. Serve immediately OR cover and store in refrigerator up to 1 week. Stir before serving. Makes about 3/4 cup
To serve salad: Arrange salad greens on 4 salad plates. Sprinkle dates on top of salad greens. Sprinkle with goat cheese and pecans. Arrange asparagus on top and top with chopped tomato. Drizzle with some of the vinaigrette. Sere salald immediately.

Asparagus Brunch Pockets
1 lb fresh asparagus, trimmed and cut into 1" pieces
4 oz cream cheese, softened
1 tbsp milk
1 tbsp mayonnaise
1 tbsp diced pimentos
1 tbsp finely chopped onions
1/8 tsp salt
1 pinch pepper
1 8 oz pkg refrigerated crescent dinner rolls
2 tsp butter, melted
1 tbspseasoned bread crumbs
In a large saucepan, bring 1/2" of water to a boil. Add asparagus and cover and boil 3 minutes. Drain and set aside. In a mixing bowl, beat cream cheese, milk and mayonnaise till smooth. Stir in the pimientos, onion, salt and pepper. Unroll crescent dough and separate into triangles and place on an ungreased baking sheet. Spoon 1 teaspoon of cream cheese mixture into the center of each triangle and top with asparagus. Top each with another teaspoonful of cream cheese mixture. Bring three corners of dough together and twist and pinch edges to seal. sh with butter; sprinkle with bread crumbs. Bake at 375 degrees for 15 to 18 minutes or till golden brown.

Asparagus Torte
CRUST
3 1/2 cups flour
1 1/4 cups unsalted butter
Salt
Butter and flour for the baking dish
FILLING
2 pounds asparagus spears
1/3 cup fresh cream
2 oz finely sliced cooked ham
1 egg
1 shallot, minced
1 sprig of fresh thyme, minced
Unsalted butter
Salt & Pepper to taste.
Begin by making the dough: make a mound of the flour on your work surface, scoop a well into it, cut the butter into the depression, and then work it into a dough, adding about 2/3 cup. Do this quick so the butter doesn't melt and roll the dough out three times, folding it over in thirds each time to reform the loaf. Fold it up after the third rolling, cover it, and put it in the refrigerator for about 40 minutes. Scrape the bottoms of the asparagus spears if they need it, trim away the woody white bases of the spears, cut the green parts into strips lengthwise, and saute them in a skillet with a chunk of unsalted butter, the shallot and thyme, salt and pepper to taste, and a little water then remove them from the flames when they're still somewhat firm. Preheat your oven to 400 degrees. Roll out the dough to about 3/16" and use it to line a 9" pan you've lined with oven paper (if the pan has a decorative wavy border the result will be prettier). Fill the tart with a layer of asparagus, then the ham, and then more asparagus. Bend the upper lip of the dough down over the asparagus, and cut the remaining dough into decorative shapes and affix them to the rim of the torte. Lightly whip the egg and cream, season the mixture to taste with salt and pepper, and pour it over the asparagus. Bake the torte for about 25 minutes and let it cool, and serve it warm.

Asparagus Cashew Stir Fry
1 lb fresh asparagus, cut into 1" pieces
1/2 cup green onions, chopped
1/2 cup red bell pepper, chopped
1 garlic clove, minced
1 tsp olive oil
2 tbsp cornstarch
1 1/2 cups vegetable broth
3 tbsp reduced sodium soy sauce
1/4 tsp ground ginger
1/2 cup cashews
1 tsp sesame oil
4 cups hot cooked brown rice
In a large nonstick skillet saute asparagus, onions, red pepper and garlic in oil till tender. Combine cornstarch, broth, soy sauce and ginger till blended and add to the skillet. Bring to a boil; cook and stir 2 minutes or till thickened.
Reduce heat and add cashews and sesame oil. Cook 2 minutes longer or till heated through. Serve over rice. Yield: 4 servings.
This is a Light & Tasty recipe, I used chopped broccoli instead of the asparagus and it turned out quite well, so I'm sure the asparagus will work well in it.

pag36, I'm seriously considering getting an asparagus bed going again. We haven't had one since we moved where we are now; the only bad part is I need to make up my mind as it takes 2 years before I would be able to start harvesting from it!

This is a good main dish salad using asparagus
1/2 lb. asparagus, cut into 2" pieces
2 cups sliced strawberries
11/2 cups cubed smoke turkey breast
8 oz can pineapple tidbits, drained, reserving liquid
2 tbsp honey
1/8 tsp salt
dash white pepper
Cook asparagus in rapidly boiling water for 3 to5 minutes or till crisp tender. Drain and rinse with cold water. Combine with strawberries, turkey and drained pineapple tidbits. In a bowl combine 1/4 cup reserved pineapple liquid with honey, salt, and pepper and mix well. Pour over salad and toss gently. Serves 4

Asparagus Quiche
3/4 pound asparagus, trimmed, chopped
water
2 tbsp margarine
1/2 cup chopped mushrooms
4 green onions, with green, thinly sliced
1 small tomato, diced
1 1/2 cups shredded Swiss cheese
4 large eggs
1 1/2 cups fat free half & half
1/4 tsp salt
1/4 tsp ground black pepper
1/8 tsp nutmeg
In a saucepan cover asparagus with water and bring to a boil over high heat reduce heat,cover and cook 5 minutes. Drain and set aside. In a skillet heat margarine over low heat and add mushrooms. Saute till the mushrooms are tender and add green onions and cook 1 more minute and set aside. Line a 10" pie plate with pastry and bake at 375 degrees for 8 minutes. Remove from oven and reduce oven temperature to 350 degrees. Put vegetables and cheese into the pastry shell. Beat eggs, half & half, salt, pepper and nutmeg together. Pour egg mixture over the vegetables. Place the filled pie shell on a large cookie sheet. Put into the oven and cook for 45 to 55 minutes or ltil a knife inserted in the center tests clean. Serves 6 to 8.

I don't eat asparagus very often because the ONLY way I like it is fresh and not canned. The fresh asparagus in NM or West Texas usually is terrible. It is thin and not firm. It is rare that I can find good asparagus.
When I do get it, I put them in a zip loc type bag with Italian dressing. I marinade it for several hours. Then, I take each one out and wrap each with prosciutto and bake in the oven for about 10 minutes or so. It is tasty and easy.

Bought some fresh asparagus and tried this soup recipe. A different one than I have had, but this turned out quite well!
Asparagus Soup
1/2 cup butter
2 cups onions, diced
2 pounds asparagus, thinly sliced
1/2 cup chopped chives
1/2 tsp sugar
1/2 tsp salt
1/2 tsp pepper
2 qts vegetarian vegetable bouillon
1/4 cup water
4 tbsp cornstarch
1 cup heavy cream
In a Dutch oven melt the butter and add onions. Cook about 5 to 10 minutes stirring frequently. Add asparagus, chives, sugar, salt, and pepper and cook 4 minutes more, stirring frequently. Reduce heat to low and cover, cook 5 to 10 minutes. Add bouillon and cover and simmer 20 minutes. In a samll bowl combine water and cornstarch and mix into the soup. Return to a boil and simmer 5 minutes. Remove from heat and stir in cream. Serve immediately. Makes 10 servings

Cheesy Asparagus
Toss 1 pound of trimmed asparagus in 1 tbsp olive oil with 1/4 tsp each salt and pepper. Spread in an even layer on a baking sheet and sprinkle with 1/3 cup grated fresh Parmesan. Roast at 425 degrees for 10 miutes or till tender. Sprinkle with lemon zest.
