I have a bad habit of buying fish and then just letting it sit in the freezer forever. What's your favorite flouder recipe? How about tilapia? I have both in the freezer and I'm tired of the recipes I've used in the past. :)

Katharina, I would use the same recipe for either fish. Here is how I baked flounder last time I made it. Everyone loved it.

BAKED FLOUNDER FILLETS

Use a casserole dish wide enough to hold all the fish you are cooking in a single layer. Brush some olive oil over the bottom of the casserole dish. Place fish in the dish. Dot with butter and sprinkle a little lemon pepper seasoning over the top. Cover the dish with a lid or foil. Bake at 350 for about 15 minutes.

The fish comes out very moist and tender.

Thank you, barbszy... this sounds good. I think it could be used for either fish, too. Do you find that it gets finished in those 15 minutes? I think I dry some of my fish out because it doesn't seem done in the short times recipes usually call for. I may have to try a shorter time in the oven and we may enjoy it more. :)

Katharina, it really does get done in that short a time. First of all fillets are VERY thin cuts. It does not take long to cook them at all, any method! They only need frying for 3 minutes per side, for example.
On top of that, they are basically steaming in the covered casserole dish.

I am making this recipe for tonight, actually, with flounder fillets.

Once the fish is no longer "translucent" you know it's done, no matter what method of cooking you use.

This is not a heavily flavored recipe. If you only use a small sprinkle of seasoning, you can really enjoy the flavor of the fish. It's very easy to overwhelm this type of fish with a lot of seasoning.

Crunchy Oven Fried Tilapia

Serving Size: 4


-= Ingredients =-

1/4 cup all-purpose flour
1/4 teaspoon salt
pepper
2 egg whites
1 pound tilapia fillets
1/4 cup dried bread crumbs
1/4 cup cornmeal
1/2 teaspoon dried basil ; crushed

-= Instructions =-

1.Preheat oven to 450 degrees F. Bake 15 minutes
2.Sift or stir flour, salt, and pepper together in a shallow dish, and set aside. In a bowl, beat egg whites until white and frothy. In another bowl, combine bread crumbs with cornmeal and basil.
3. To bread the fillets, dip first into flour, shaking off any excess, then into egg whites, then into bread crumb mixture.
4. Spray a shallow baking dish with non-stick cooking spray. Lay fillets flat in the dish, tucking under any thinner ends or edges for more even cooking. Bake in the preheated oven for 10 to 15 minutes, or until fish flakes easily with a folk.



Smothered Tilapia

Serving Size: 4


-= Ingredients =-

1 pound tilapia fillets
2 large tomatoes ; sliced
4 slices Swiss cheese
2 large lemons
steak ; seasoning
dried ; oregano

-= Instructions =-

1. Preheat the oven to 350 degrees.
2. Place the fish fillets into a 9x13 inch glass baking dish. Slice the lemons in half, and squeeze the juice out over the fillets, turning them to coat thoroughly. Sprinkle steak seasoning to taste over both sides of the fillets.
3. Lay slices of Swiss cheese over the fillets so they are covered. Place tomato slices over the cheese. Sprinkle dried oregano over the top.
4. Bake for 20 minutes in the preheated oven, or until fish flakes easily with a fork.


PHOEBE'S BROILED TILAPIA PARMESAN

Serving Size: 6

-= Ingredients =-

2 pounds tilapia ; thawed, 6-8 filets
Topping:
2 ounces parmesan cheese ; 1/2 cup
1/4 cup butter ; softened
3 tablespoons mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoons onion powder
1/8 teaspoon celery salt

-= Instructions =-

Blend topping ingredients in a small bowl; keep chilled until needed.
Raise your oven rack to the highest setting and preheat the broiler. Line a large sheet pan with heavy foil; spray with nonstick cooking spray. Arrange the fish on the baking sheet and sprinkle lightly with salt on both sides. Broil 2-3 minutes; flip fish over and broil 2-3 minutes on the other side. Spread topping evenly over fish. It will tend to melt and run off, so just spoon it back on top of the fish as well as you can. Broil about 2 minutes to brown the topping, watching very closely so that it doesn't burn.

I surely will, and thank you! I have my recipe cards right here beside me and will be copying the recipes. I'm sure we'd like the crunchy but the recipe with Swiss cheese sounds too good to pass up, too.

That last recipe for the Parmesan Tilapia sounds like on I've used for other fish in the past. It's very good.

Katarina, Tilapia is used frequently by myself and my son. I just cook mine in a skillet. I use either butter or olive oil and add in any seasonings that I like. Examples include fresh garlic, Mrs. Dash, Lemon Pepper, Mustard Pepper. I have also used bottled marinades.

I use a homemade blackening seasoning on tilapia, then bake it. Here is the mix I use:

2 tsp. paprika
1 tsp. onion powder
1 tsp. garlic powder
1/4 tsp. cayenne pepper
1/2 tsp. white pepper
1/2 tsp. black pepper
1/2 tsp. salt
1/2 tsp. dried thyme leaves
1/2 tsp. dried oregano leaves

Combine and store in a covered container.

Sprinkle this on both sides of the tilapia before baking.

I also use this for chicken breasts.

Here is one that is good on tilapia or on red snapper. It is a recipe from Tautog's Restaurant at Winston's Cottage in Virginia Beach, Virginia.

Asian Honey BBQ Tilapia

1 can ( 8 oz) crushed pineapple in juice, drained
1/2 cup finely chopped onion
1/4 cup honey
3 tbsp soy sauce
2 tbsp hosin suace
2 tbsp fresh lime juice
2 tbsp wjite wine
2 tsp grated peeled fresh ginger
1 1/2 tsp cornatarch
2 jalapeno chilies, (seeds & membranes discarded ),finely chopped
4 tilapia or snapper fillets (6 oz each)

Preheat oven to 450 degrees. In a bowl combine all ingredients except fish and stir till mixed and set aside. In a 13 x 9" glass pan(don't use metal), place fish and spoon sauce over fillets. Roast 12 minutes or till fish is opaque throughout. Serve fish with the sauce in the baking dish.

That's what happened to me... I found a REALLY good sale
on the filets and then got them home and wanted a fabulous
new recipe for them. There were several that I copied in
this thread. :)

I was going to post my Tilapia recipe and then I saw that Phoebe uses the same recipe! It's wonderful and even the kids will eat it. :D

Well that's a pretty good recommendation then! I wasn't sure that
I'd broil it with that recipe. Do you think that baking it with this topping
would turn out alright? :confused:

I don't know exactly. One of the things about the topping is that it's very light and moist which keeps the fish from drying out, so I wonder if baking it would compromise that. If you do bake it, let me know how it turns out!

Ah, good point there, yes. Baking would most likely dry the fish out.
I haven't broiled fish yet, but I guess this would be a good place to
start. :)

I bake fish a lot, but just put sliced onion on top; spray with olive oil, sprinkle black pepper, paprika on it and bake at 425 degrees just till flaky. I use this method on lots of different fish. The "secret" is to watch it carefully and just don't bake to long.

So many yummy recipes here!

My favorite way to make Tilapia is to broil it with a sprinkle of Citrus Seasoning (Sams Club) or Lemon Pepper, spinkle of Olive Oil, blk. pepper and a splash of lemon juice. (I love lemon juice on fish!)

I agree with cat lover that the key is to watch it and make sure not to cook it too long.

My family--even my little one--loves this and I can eat it while low-carbing because I will make sure there is no sugar in any of the seasonings.

It's great because it is a fast meal. I usually add rice and a veggie or salad with it.

Tilapia With Dill & Sour Cream

6 to 8 tilapia fillets
Salt and pepper
1/2 cup sour cream
1/3 cup mayonnaise
2 tbsp finely chopped red onion
1 tbsp finely chopped fresh dill
2 tsp chopped parsley
1 tbsp fresh lemon juice

Heat oven to 350 degrees. Grease a 13 x 9" baking dish. Place tilapia fillets in the baking dish and sprinkle with salt and pepper. Combine remaining ingredients and spread evenly over the fillets.Bake for 12 to 15 minutes, or until fish is cooked through and flakes easily with a fork.Serves 3 to 4.

Mediterranean Tilapia


Season 4 pieces of tilapia with 1/4 tsp Greek seasoning. In a skillet heat 1 tbsp olive oil. Add tilapia and cook 5 minutes. Remove from the skillet and add 2/3 cup chopped red onions, 1/3 cup Italian dressing, 1/4 cup each chopped dried apricots and sliced kalamata olives and 2 tsp minced garlic to the skillet and cook 3 minutes. Serve over couscous
