I couldn't resist this one ladies. As I stated in another post I love Italian Food. I would like to get some of your best recipes to try out. Thanks.
My most favorite is:
Cover fry pan with olive oil (use the best you can afford), cut up & stir fry the following: garlic, mushrooms, yellow and green zucchini, red bell pepper, a few carrots julianne(sp) cut. Only cook till soft but yet crispy. Serve with prepared Zita pasta....add Parmesan or Romano cheese! A little salt if desired. You want to make sure you have enough olive oil to cover the pasta and you can add practically any veggie...I also like black olives. This is so tasty and I can even eat it cold...but that's not for everyone. I am italian so using the best olive oil is essential...but lesser expensive will do. Hope you enjoy. Mine is my homemade spaghetti sauce:
1 medium onion, chopped
1 green pepper, chopped
8 oz fresh mushrooms, sliced
2 cans (15 oz each) tomato sauce
2 cans (12 oz each) tomato paste
1 can (7 1/2 oz) pitted ripe olives, drained and sliced
2 envelopes (1 1/2 oz each) Italian style spaghetti sauce mix with mushrooms
3 cups water
1 tbsp sugar
1 tsp oregano leaves
2 cloves garlic, crushed
1 bay leaf, crumbled
1 tsp crushed red pepper flakes
1 tbsp hot sauce
1 pound healthy choice smoked polish or kielbasa sausage, cut into 1/2" slices
Combine all ingredients except sausage, mix together, cover and cook about 1 1/2 hours stirring occasionally. Add sausage and cook another 1/2 hour. Serve over cooked spaghetti with parmesan cheese on top.
If you use ground beef you can also add 2 pounds cooked ground beef with the sauce ingredients at the beginning or make meatballs and add them. 8 servings~ Enjoy!
My dh makes a mean skillet using either all Italian sausage or a mix of chicken and sausage. He browns it in big skillet adds onion, pepper and muchrooms and garlic to taste, adds salt and pepper and basil. Cook until sausage is done, while browing cook up a pot of pasta ,any kind. Save a little water, add the pasta to skillet add Italian dressing and grated ramion to taste. adn enjoy with a salad and bread. I love it since it is always a little different and yet the same great Italian taste. Dinner tonight I think
