One of our favorite ways of cooking chicken is to grill it. However, I am getting tired of our same ole marinade or BBQ sauce. I know there has got to be a way to change things up a bit!

Any suggestions of a new marinade or some other fun way to jazz up chicken? We try to keep most of our meat intake with chicken, so I need help! We are getting bored.

The marinade that we normally use is the zesty italian dressing. It normally works very well and taste yummy.

Are you wanting just ways to make chicken in the way of grilling and marinades? What about beer chicken in the oven or on the grill? Also, what about baked chicken in the crockpot with veggies or even baked in the oven? Also, are you agreeable to casseroles? If so, I will be glad to guide you to some good ones. One more question. Are you wanting healthy or all types of recipes?

We've made "Mexican" chicken from time to time, and it always seems to be a hit. Before baking the chicken, you pour salsa/picante sauce over it. Then, when it's almost done, you put cheese over the top and let it melt. My family likes it. :)

Gabsmom, are you looking for something with bone-in or boneless chicken? And by "Italian sauce" you mean a tomato-based sauce, right?

Here's one my family likes, using boneless, skinless chicken (any type):

Saucy Baked Chicken with Mushrooms

2 pounds boneless skinless chicken pieces
1 tbl olive oil
8 oz fresh mushrooms, halved
1 large onion cut in thin wedges
1 can diced tomatoes (14 oz)
1 can tomato paste (6 oz)
1/2 cup water
1 tsp sage
Italian seasoning to taste
1 tsp minced garlic

Season chicken with salt and pepper. Brown
on all sides in 1 tbl olive oil. Transfer chicken
to 3 qt baking dish. Cook mushrooms &
onions in same skillet as chicken was cooked
in. Stir in tomatoes, tomato paste, water &
spices. Spoon vegetable sauce over chicken.
Bake uncovered 40 min. at 375.

(Sometimes I add bell pepper strips as well, just cook with onions & mushrooms).

Here's one we like!

Chicken with Herbed Tomato Sauce

4 pounds chicken breast ( you can use any chicken part you want)
1/2 tsp pepper
1/4 cup vegetable oil
1/2 cup chopped onion
1 clove garlic, minced
2 cans (14.5 ounces each) diced tomatoes
1 can (8 oz) tomato sauce
1 can (6 oz) tomato paste
2 tbsp snipped parsley
1 tsp dried leaf basil
1/4 tsp ground black pepper

8 ounces spaghetti, cooked and drained
grated Parmesan cheese

Wash chicken pieces and pat dry. Season chicken with 1/2 teaspoon ground black pepper. Heat 3 tablespoons oil in a large skillet and brown chicken on all sides. Remove chicken. Pour off all but 2 tablespoons of oil. Add onion and cook and stir till onion is tender. Stir in minced garlic, browned chicken, tomatoes, tomato sauce and paste, parsley, basil, 1/4 teaspoon pepper. Cover and cook over lowest heat for 1 to 1 1/2 hours, or till chicken is tender. Stir occasionally and add a little water if needed. Skim off excess fat and serve with hot cooked spaghetti with Parmesan cheese. Serves 4.

I buy a lot of chicken breast meat cut into stir-fry pieces, tenders, etc. and I always look for chicken recipes, too. Two of my favorites for breast meat:

BBQ Chicken Pizza... buy an already made crust like Boboli. Cook your chicken breast (works well with leftover chicken) and mix it with a little of your favorite bbq sauce. Spread a little more bbq sauce on the crust, add the chicken. Sprinkle with garlic powder and your favorite pizza herbs... top with shredded cheese and bake.

Another thing we like is BBQ Chicken Quesadillas... again cook chicken breast and mix with bbq sauce. Spread a little bit of sauce on one half of a flour tortilla, add the chicken and shredded cheese. Fold over and heat in pan like you would a regular cheese quesadilla, until the cheese melts over the chicken. Cut in half to serve.

My husband makes a great chicken casserole dish with stuffing. You season and place chikcen breast in a casserole dish. Put into potatoes, carrots and celery. Pour one to two cans (or the equivalent) of chikcen broth over it and cover with dry stuffing mix. Cover with alumninum foil and bake at 350 for approximately 45 mins to 1 hour. When the stuffing is fluffy it's done!

These are ecellent recipes. I can't wait to try it out. I really love italian food so I am always trying to find an italian recipe. Maybe I will start a thread to list your favorite italian recipe. I would really enjoy seeing all of those ideas :)

These are fantastic!! Sorry, I didn't get online for a few days, and just found these amazing replies from you all.

I am looking for any and all recipes, not only grilling. I lean towards more healthy fare, though I'll take any ideas for that "special" treat. I love the two recipes posted with the Italian flair. They sound delicious!

I do enjoy casseroles as well. I just prefer recipes that have ingredients that I would normally have around (nothing too exotic) and things I can put together easily. Time is limited with a toddler underfoot.

You all are SO much help! THANKS!

This might be one that you would have the ingredients on hand.

Broccoli/Chicken Casserole

4 oz noodles
2 1/2 cups cooked chicken
1 (10 oz0 pkg. frozen chopped broccoli, thawed
1/2 cup green onions, sliced
1 can cream of mushroom soup
1/2 cup milk
1/2 cup swiss cheese, shredded
1 tsp dried basil, crushed
1/2 tsp pepper

Cook noodles according to pkg directions. In a 2 qt dish stir together the cooked noodles, chicken, broccoli and green onions. Mix together soup, milk, cheese, basil and pepper and stir the mixture into the noodles. Bake covered at 350 degrees for 40 minutes.

I have a couple of recipes: I don't measure so I will list as best I can.
1st: Mix 1 can mushroom soup with about 1 to 1/2 cups of instant rice. Turn chicken breast bone side up....stuff (so to speak) breast with mixture, sprinkle with paprika. You can wrap this all in tinfoil and bake on grill about 45 min to 1 hr...depending on size of breast or you can cover with foil and bake in 350 degree oven for 1 to 1 1/2 hrs.

2nd: This again is an old recipe from my Italian family: Lay chicken pieces in baking dish...pour cooking oil lightly over chicken, sprinkle with minced garlic, italian seasoning, turn chicken over and repeat. Bake in 350 degree oven for 1 hr. (again) depending how much chicken and how large...just be sure chicken is done. Now, DON'T throw out the juice....had a little hot water to drippings and scrap what ever you can....add this to a pan, adding a little more water and 1 chicken bouillon cube (you will need enough water to cook noodles). Once this boils, cook noodles till done (I use either wide egg noodles or the thin ones). This is another one of my favorites. Should anyone try these recipes, please let me know how they turned out.

Barbequed Beer Sauce Chicken

1/2c ketchup,
1/2c mustard,
1/2c brown sugar,
1/2c onion,
salt and pepper,
1/2c beer
few shakes of Worcestershire sauce.

Heat in pot on stove for a little. Stir well. Take chicken and put on
grill. {can precook, boil chicken first} if you want. I've done it both
ways. Baste sauce on chicken with pastry brush. Continue till chicken is
done.

Cola Chicken

1 cup Coca-Cola -- Pepsi Cola or other cola
1 cup catsup
1 large onion - sliced
1 1/2 pounds whole chicken

Wash and pat dry chicken. Salt and pepper to taste.

and catsup and cook on LOW 6 to 8 hours. When
cooked place in refrigerator to cool and then skim
off the fat. Reheat and eat.

Beer Butt Bird:
One 4-5 pound chicken

Dry Rub:
1 t. raw sugar
1 t. garlic powder
1 t. onion powder
1 t. cayenne pepper
1 t. paprika
1 t. dry yellow mustard
1 t. finely ground sea salt

Basting Spray:
1 cup apple cider
1 Tbsp. balsamic vinegar

Steaming Liquid:
12 oz of your favorite canned beer(canned fruit juice can be substituted)
Wash,dry,and season chicken generously inside and out with rub.Work mixture well into skin and under skin wherever possible. Set aside,covered, in the refrigerator for about 2 hours.
Drink 1/2 the beer. Insert the other 1/2can and all in the chicken cavity so that the legs and the can itself hold the chicken upright.
Place on smoker grill. This position does two things;
First;it helps drain off fat as the chicken cooks; second,the beer steams the inside of the chicken,making it very moist.
Smoke for 2 - 2 1/2 hours spraying with basting spray several times, until chicken is done and internal temperature is 180 deg. for whole chicken.
Carefully remove the bird from the grill and ease the can out of the cavity.
Place on serving tray and carve.
Serves 4-6

Great Chicken Casserole Dish:
(family favorite)
1 chicken, cooked, deboned and cut-up
1 Box Chicken & Vegetable Rice-a-Roni (prepared according to package instructions)
1 cup diced celery
2 Cans Cream of Chicken Soup OR Cream of Broccoli or Celery Soup
1/2 - 1 cup slivered almonds
1 onion chopped
1 cup green bell pepper, chopped or diced
3/4 cup Mayonnaise
Cooked Spagetti ( I like using Angel Hair spagetti

Cook your chicken, let cool and debone: Saving chicken stock for cooking spagetti.
Cut chicken into bite-size pieces.
Mix soup and mayonnaise into bowl.
Add remaining ingredients Except spagetti.
Cook spagetti in chicken stock until tender.
Strain spagetti and place in greased 9x13 pan.
Cover spagetti with remaining ingredients.
Cover and refrigerate overnight.
Bake in 325 deg. oven for 45 min. or until good and hot.

Chicken with Black Bean Salsa

6 boneless skinless chicken breast halves
1 tbsp crushed fresh garlic
1/4 tsp pepper
3 tbsp chicken broth
1 can (15 oz) black beans, undrained
1/2 cup salsa or picante sauce
3 tbsp sliced scallions

Rinse chicken and pat dry. Spread each breast with garlic and pepper. Coat a large skillet with nonstick cooking spray and preheat pan. Cook chicken about 2 minutes on each side till browned. Reduce heat to low and add broth. Cover and simmer 10 to 12 minutes or till juices run clear when chicken is pierced. Transfer chciken to a platter and cover to keep warm. Drain any liquid from skillet and add undrained black beans and salsa or picante sauce. Cook a and stir over medium heat till heated. Spoon bean mixture over the chciken and sprinkle with scallions and serve hot. Good served on top of cooked brown rice. 6 servings

Crispy Cajun Chicken

8 skinless chciken breast halves
1 1/4 cups nonfat yogurt or buttermilk

COATING
5 cups corn flakes
1 tbsp ground paprika
3 tsp Cajun seasoning

Rinse chciken and pat dry. Put chicken in a shallow nonmetal dish and pour butermilk or yogurt over chicken. Turn to coat, cover and refrigerate several hours or overnight.

Make coating: Crush corn flakes in a food processor and mix corn flake crumbs, paprika and cajun seasoning together in a plastic bag. Two pieces at a time; remove chciken from mixture and put into bag of crumb mixture and shake to coat. Repeat with all chicken. Coat a large baking sheet with nonstick coooking spray and put chciken on pan. Lighty spray each piece of chicken with nonstick spray and bake at 400 degrees 50 minutes or till meat is cooked through.

I often make a casserole like this because like you said, I keep the noodles, mushroom soup, chicken, and cheese on hand. I often throw in something like pimiento or different herbs.

I would never have thought to add pimiento to chicken casserole of any type. Does it affect the flavor that much? Or is it just a subtle flavor?

Extremely subtle with the teeny little jar I chop up and add. The first
time I did it, it was more for color and it looked really pretty. Do you add
pimiento when you make chicken ala king?

Here'a another good chicken recipe!


Country Style Chicken


6 boneless skinless chciken breast
1 egg ( I use 2 egg whites, beat)
1 tbsp water
3/4 cup dry bread crumbs
1/4 cup reduced fat grated Parmesan cheese
1 envelope dry onion soup mix
1 tbsp margarine, melted

Flatten chicken to about 1/2" thickness. Beat egg and water in a bowl. Combine bread crumbs, parmesan cheese and the soup mix. Dip chicken in the egg mixture and then coat with the crumb mixture. Put on a greased baking sheet and drizzle with the margarine. Bake, uncovered at 350 degrees for 25 minutes or till juices run clear. Makes 6 servings

This sounds just delicious!! Could I just use bone-in chicken instead? I don't often buy boneless since it is more expensive. Does it end up being really crispy?

Sounds like something easy, which is what i love BEST.

You can use bone in with no porblem I just like the boneless, skinless. It doesn't get as crispy as "regular" fried chicken, but we like it. DH can't have the regualr any longer so this is the next best thing! LOL

Sweet & Tangy Chicken


1 tbsp margarine
4 boneless chicken breast halves
1 can (10 3/4 oz.) condensed tomato soup
1/4 cup water
1 tbsp packed brown sugar
1 tbsp vinegar
4 cups hot cooked rice

Heat margarine in skillet. Add chicken and cook till browned. Add soup, water, sugar and vinegar. Heat to a boil. Cover and cook over low heat 5 min. or till done. Serve with rice. Serves 4.

This is cooked in a crockpot so it makes it a great dish to fix when you are busy and want supper ready later!

Asian style Chicken

6 pieces chicken
1/2 cup soy sauce
1/4 cup packed light brown sugar
1 clove garlic, crushed
8 oz can tomato sauce

Rinse chicken and pat dry with paper towels. Place chicken in a slow cooker. In a medium bowl, combine soy sauce, brown sugar,garlic, and tomato sauce. Pour sauce over chicken. Cover and cookon LOW about 5 hours or until chicken is tender.

My family like this recipe that I make:


Tami's Crockpot Chicken "Stew"

I used my 5 qt. crockpot and layered the following:

first layer : cubed red potatoes (about 1/3 or a little more up the pot)

second layer: 1 smal bag of baby carrots + one small can of mushrooms
On top of this I poured one can of cream of chicken soup and a sprinkle of poultry seasoning.

Third layer: 5 frozen chicken breasts

On top: 1 more can of cream of chicken soup and another sprinkle of poultry seasoning

I cooked this on high for 3 hours and then removed the chicken and sort of stirred the potatoes and carrots. Add chicken and cover again for 2 more hours.

Keep an eye on the last hour of cooking because it will depend on the size of your chicken breasts for how long it will take to cook.

Remove chicken and cut into cubes. Return to pot and stir gently to mix.

Serve it in bowls, hence the "stew" name.

Great with warm biscuits!

I also thinly slice green peppers and onions, then saute them in a pan. Shred a couple of cooked chicken breasts and 1 packet of taco seasoning.


This filling is great for tacos, quesadillas or even stuff in large pasta shells or mix with sm. pasta shells and use a cheese sauce with it. :)


Since I am low carbing, I either put it into LC tortillas or make my own cheese crisps and use this as a nacho topping. Lawry's make a decent taco seasoning.

If you are talking about the Asian style Chicken I used boneless- skinless breast. I use those most of the time because it cuts down the fat content for DH.;)

Herb Baked Chicken Breasts

4 to 6 chicken breast halves
1/4 cup olive oil
1/2 cup minced green onion
2 cloves garlic, minced
1 tsp dried rosemary
1 tbsp fresh chopped dill
1/2 tsp dried tarragon
1/2 cup fresh lemon juice
1/4 tsp coarsely ground black pepper
grated zest of one lemon

Rinse chicken and transfer to a large resealable plastic food storage bag. Combine marinade ingredients and pour over chicken. Turn bag to coat chicken pieces well. Refrigerate and marinate for 2 to 4 hours, turning occasionally. Remove chicken from marinade and drain well then refrigerate the marinade to use as a baste for the chicken halfway through cooking time. Arrange chicken on a rack in a foil lined baking dish. Bake at 400 degrees for 35 minutes. Turn and brush with reserved marinade and bake about 20 to 30 minutes longer basting several times before the chicken is done. Chicken should be browned and juices will run clear when pierced with a fork.
Serves 4 to 6.

Country Captain Chicken




2 tsp olive oil
4 boneless, skinless chicken breast halves about 5 oz each
1 small onion, thinly sliced
3 cloves garlic, minced
1 tbsp curry powder
1 1/3 cups canned crushed tomatoes
1/4 cup dried apricots, thinly sliced
1/2 tsp dried thyme
1/4 tsp pepper
1/4 cup sliced almonds


Heat oil in large nonstick Dutch oven over medium heat. Add chicken and saute till golden, about 3 minutes a side. Transfer chicken to plate with tongs . Add onion and garlic to pan and cook till onion is tender, about 5 minutes. Stir in curry powder and cook for 1 minute. Add tomatoes, apricots, thyme, and pepper and bring to a boil. Return chicken to Dutch oven. Reduce to a simmer and cover and cook till chicken is cooked through, about 20 minutes. Serve sprinkled with almonds. Serves 4

Szechuan Chicken




1 tbsp oil
1 tbsp sesame oil
2 chicken breasts, boneless and skinless, cut into 1" cubes
2 tbsp cornstarch
3 cloves garlic, minced
1/4 cup soy sauce
1 tbsp rice wine vinegar
1/2 red bell pepper, julienned
1 carrot, julienned
1 small zucchini, julienned
1/4 cup chicken broth
1 tbsp light brown sugar
1 bunch scallions, cut diagonally in 1" pieces
Hot cooked rice


Heat the oils in a wok over high heat. Toss the cubed chicken breast in a bowl with the cornstarch to coat. Add the chicken and minced garlic to the wok and stirfry till the chicken is lightly browned. Add the remaining ingredients except the scallions. Cover and cook for three minutes. Add the scallions. Cover and cook for two more minutes. Serve with hot cooked rice

My kids think I'm nuts when I go into the kitchen with a camera to photograph the dinner. :D But I like to put the pictures on my blog with the recipes to show what the food will look like.

Those pictures would make a nice addition to a cookbook for your children at a later day. What would be more cute than their "mom's favorites" with pictures of them cooking as a child?!

Nutty Chicken Salad Sandwich

3 cups cooked boneless chicken, cubed
1/2 cup celery, thinly sliced
1/4 cup green bell pepper, diced
1/2 cup red grapes, cut into halves
1/4 cup walnut pieces, toasted
1/4 cup onion, sliced
1/4 cup cucumber, peeled, seeded and diced
Juice of half a lemon
2 tsp honey
1 tsp dried basil
1 tsp dried thyme
One 8oz ctn plain yogurt


Place chicken, celery, green bell pepper, grapes, walnuts, onions and cucumber in a large bowl and gently toss. Place the lemon juice, honey, basil, thyme and yogurt, plus salt and pepper in a small bowl and whisk together till smooth. Pour the yogurt mixture over the chicken and toss till combined.

Makes 4 sandwiches
