Lime & Cottage Cheese Salad

There must be hundreds of versions of this; here's one!

1 pkg. lime gelatin (small box)
1/2 cup hot water
1 small can (8oz) crushed pineapple & juice
1 cip cottage cheese
1/2 cup mayonnmaise
2 tbsp horseradish

Dissolve gelatin in hot water and add other ingredients; mold in your favorite jello mold. Serves 6

Here's another version of this;I made this one the other day and liked the pears in it!

Cottage Cheese & Pear Salad

6 canned pear halves
water
1 pkg. (3 oz) lime flavored gelatin
2 tbsp fresh lemon juice
1 canned pimiento
1/2 cup crushed pineapple
1 cup cottage cheese
2 tbspchopped green pepper
salad greens

Drain pears and add enough water to syrup to make 1 3/4 cups and then heat the liquid. Pour the hot liquid over gelatin and stir till it is dissolved. Add lemon juice and cool. Pour a thin layer of gelatin into a deep round dish
and chill till almost set. Put a small strip of pimiento in tip of each pear half and arrange cut side down in pan. Fold chopped pimiento, pineapple, cheese, and green pepper into remaining gelatin. Pour over pears and chill till firm. Unmold onto salad greens and serve. Makes 6 servings
