Hi there. As most of us probably do, I plan a pretty good menu for our family on a budget. But lately I feel like I'm in a rut and am making the same things over and over again. Any exciting suggestions for ground beef dinners?

I get in those ruts too. Here are a few suggestions that you may or may not have tried:
hamburger pizza
meatball subs
chili
Make a meatloaf with a rice and cheese center so that when your family cuts into it, they get a surprise
Shepherd's Pie
I'm sure there are more. Good luck. If I think of any, I will post more.

Shepherd's pie is a great solution along with homemade chicken pot pies, tamale pies, and lamb stew. If you family likes lamb at all, an oven baked stew is so simple and great. Just buy cheap cuts of lamb, slice up potatoes, carrots and onions. Put them all in a Dutch oven, fill it up with water and put it in the oven and forget it for three hours on a low temp.
Everyone loves it at my house.

There is a really good recipe called gooey mexican casserole that is delicious. It has cheeses, ground beef, mild green chilies, mayo, hmm I cant rermember what else but I can post the recipe if I havent already posted it, here.
There are some taco bake type recipes that are really good.
If your family likes green peppers, you can make a ground beef/manwhich type mix and stuff the green peppers with it and top them with cheese.
(Pretty bad when I cannot remember what I have posted, already!)
In the section where people post recipes they are looking for, check out the thread for recipe ideas for ground turkey. There are several good ones there and they are all good for using ground beef instead of ground turkey.

These are a great start, thanks everyone. I actually found a new one too! Its a one pot meal with ground beef, potatoes, carrots and white rice. You cook the ground beef, drain, add 1 cup rice, dice veggies and 2 cups water and let it simmer until the water is absorbed. With soy sauce and garlic it was really good, if a little starchy.

With both potatoes and rice, that does seem a bit starchy ...and sort of unusual for both ingredients in one dish. I think I might ditch the potatoes. Of course, I love rice lol.

Meatballs subs. That is great.... I never thought of that. You guys really do not know how excited I am about this. The one question I have would be how would you go about making the meatballs. I am a new cook so I would love to get a recipe from one of you if you have one. Thanks so much.

Meatballs
1 pound ground beef
1/2 cups bread crumbs
1 egg
1/4 cup parmesan cheese
salt, pepper, garlic powder, and onion powder to taste
1/2 teaspoon oregano
1/2 teaspoon basil
Mix together and form into meatballs. Bake on a cookie sheet in a 350 degree oven until done. You can add these to spaghetti sauce and make subs with them.

Thanks so much for the recipe this will most certainly be on the menu tonight this is so excellent. For this side dish I was thinking that we could maybe have fries with root beer floats.

We make lasagna, but not that often. It's usually about $30 for as much as I make, but it generally feeds us for at least 3 meals, so I guess $10 per meal for a family of 4 isn't THAT bad.

I make alot of meals using hamburger cause that is my husbands middle name...........is hamburger. :)
Here are few recipes to help you get started. If you would like more, I have plenty of recipes to go around.
Sloppy Joe Meatballs
Makes 21 servings Prep: 35 minutes
Cook: 10 minutes
Ingredients
1 egg, beaten
1/4 cup fine dry bread crumbs
1 medium onion, finely chopped (1/2 cup)
1/4 teaspoon dried oregano, crushed
1 pound lean ground beef
1/2 cup chopped green sweet pepper
1 tablespoon cooking oil
1 15-ounce can tomato sauce
2 tablespoons brown sugar
1 tablespoon prepared mustard
1 teaspoon chili powder
1/4 teaspoon black pepper
1/4 teaspoon garlic salt
Dash bottled hot pepper sauce (optional)
Directions
1. Heat oven to 350 degree F. Combine egg, bread crumbs, 1/4 cup of the onion, and the oregano in a large mixing bowl. Add the ground beef and mix well. Shape into 42 meatballs about 3/4-inch in diameter. Arrange in a single layer in a 15x10x1-inch baking pan. Bake for 12 to 15 minutes or until no pink remains. Drain well.
2. Meanwhile, cook remaining 1/4 cup onion and the sweet pepper in hot oil in a large saucepan until vegetables are tender. Stir in tomato sauce, brown sugar, mustard, chili powder, black pepper, garlic salt, and if desired, hot pepper sauce. Bring to boiling. Reduce heat and simmer, uncovered, for 5 minutes. Serve immediately. Makes 21 servings.
Make-Ahead Tip: Carefully place drained meatballs in sauce. Place in shallow freezer containers. Cool slightly. Cover and freeze up to 1 month. To serve, thaw meatball mixture in refrigerator overnight. Place in a large saucepan. Cook over medium-low heat until heated through (about 10 minutes), stirring occasionally. Serve in a fondue pot, large warmed ceramic bowl, or crockery cooker. Or, to reheat in a crockery cooker, heat thawed meatballs and sauce, covered, on high heat for 2 to 2-1/2 hours

Beefy Taco Joes
Ingredients
1 lb. ground beef1 can (10 3/4 oz.) Campbell's® Condensed Tomato Soup1 cup Pace® Chunky Salsa1/2 cup Shredded Cheddar cheese8 round sandwich rolls, split
Directions
BROWN ground beef in skillet. Pour off fat. ADD soup and salsa. Heat through. Top with cheese. Serve on hamburger buns.

Pizza Meat Loaves
Favorite pizza flavors are featured in individual meat loaves that can be made ahead or served today.
Ingredients:
1 jar (1 lb. 10 oz.) Prego® Traditional Pasta Sauce
1 1/2 lb. ground beef
1 1/2 cups Pepperidge Farm® Herb Stuffing
2 eggs, beaten
1 medium onion, chopped
1/4 cup chopped green pepper
1 tsp. dried oregano leaves, crushed
4 oz. mozzarella cheese, cut into 6 pieces
Directions:
MIX 3/4 cup pasta sauce, beef, stuffing, eggs, onion, pepper and oregano thoroughly and shape firmly into 6 loaves, placing 1 piece of cheese in center of each loaf. Place loaves in baking pan.
BAKE at 400°F. for 30 min. or until meat loaves are done. Cool slightly. Wrap and refrigerate up to 3 days. Cover and refrigerate remaining pasta sauce.
PLACE meat loaves and remaining pasta sauce in skillet. Cover and heat through.
TIP: Meat loaves can be served immediately after baking. Heat remaining pasta sauce and serve with meat loaves.

TACO Pie
1 lb. ground beef
2 packages taco seasoning
1 1/2 cups chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups milk
3/4 cup Bisquick
3 eggs
1 cup Cheddar cheese (grated)
2 tomatoes (diced)
chopped lettuce-enough to cover top of pie
1 can (small) sliced black olives
sour cream (optional)Brown ground beef and onions. Drain and add taco seasoning (do not add water called for on package directions!) add salt and pepper. Spread meat mixture in the bottom of 10 1/2" pie plate. Beat eggs, milk, and Bisquick until smooth. Pour over hamburger mixture.
Bake at 400-degrees for 25 minutes or until knife comes out clean. Sprinkle with cheese, bake another 5 to 8 minutes until cheese is melted. Top with lettuce, tomatoes, and black olives. Serve with a dollop of sour cream, if desired.

TACOS IN PASTA SHELLS
1 1/4 pounds ground beef
1 pkg. (3oz) cream cheese with chives,
cubed and softened
1 t. salt
1 t. chili powder
18 uncooked jumbo pasta shells,
cooked, rinsed, and drianed.
2 T. melted butter
1 cup prepared taco sauce
1 cup shredded cheddar cheese
1 cup (4oz.) shredded Monterey Jack cheese
1 1/2 cups crushed tortilla chips
1 cup dairy sour cream
3 green onions, chopped
Leaf lettuce(optional)
small, pitted black olives (optional)
Cherry tomatoes (optional)
Cook beef in large skillet over medium-high heat until brown,
stirring to seperate meat; drain well.
Reduce heat to medium-low.
Add cream cheese, salt and chili powder;
simmer for 5 min.
Toss shells with butter; fill with meat mixture.
Arrange shells in a buttered 13x9 inch pan.
Pour taco sauce over each shell.
Cover with foil.
Bake in preheated 350 deg. oven for 15 min.
Uncover; top with cheddar cheese,
Monterey Jack cheese and chips.
Bake for another 15 min. or until bubbly.
Top with sour cream and chopped green onion.
Garnish with lettuce, olives and cherry tomato

That last recipe sounded great! I'll have to give that one a try. I'm sure my family will love it since they're big meat eaters and we LOVE Mexican food.

I make a meatloaf with Chicken Stovetop Stuffing and Barbecue sauce that my family loves. You take two pounds of hamburger, and mix it with one box of Stovetop Stuffing, two eggs, 3/4 cup water, and 1/4 cup barbecue sauce. Press into a casserole dish, then put another 1/4 cup (or more) barbecue sauce on top. Bake in 350 degree oven for 1 hour. I like to put catsup on top when I eat mine, but hubby and son like to put more barbecue sauce on theirs. This is a really easy recipe, and the whole family enjoys it. I usually serve it with mashed potatoes (from a box, of course) (too lazy to do real ones - LOL)!! , and a vegetable.

I wouldn't have thought to use stuffing mix in meatloaf, but I guess it makes sense. My husband wants to have a combination of ketchup, mustard and brown sugar on his - guess that's basically a bbq sauce. LOL

Many people put bbq sauce on their hamburgers, so it would make sense that it would also taste good on meatloaf.

These are some great ideas for ground meat. I would add one of my own favorites... sloppy joes. In fact, I made myself so hungry for sloppy joes that I'm making them for tonight's dinner. :) It's been a long time since I made meatball subs. I have to look for my recipe!

This is *so* not fair making me read things like this when dinner is still so many hours away! Fries and root beer floats sound just about perfect for this meal of subs, yes. :)

I have two really easy recipes that use ground beef.
Easy chop suey
1 lg can or 2 smaller cans of Franco American spaghetti
1 lb ground beef
1T worcestershire sauce
1 small onion chopped
In a skillet, brown the onion and ground beef - add the worcestershire sauce. Cook until done then add the Franco American spaghetti. Cook until heated. Serve and top with parmesan cheese. (my dks love this recipe)
The other recipe is:
1 pkg. of Near East spanish rice
1 lb ground beef
1 can diced tomatoes (with gr. peppers & onion or italian style)
Brown the ground beef in a skillet (chopped onion may be added if desired)
Cook rice mix according to directions. Add rice mix to the cooked ground beef and the can of tomatoes. Cook until heated. (chunks of pork may be used in place of ground beef if you like something different - just cut the pork into chunks and cook until done then add the cooked rice mix and canned tomatoes.
This is a great thread. I am definitely going to try some of the other recipes
