View Full Version : Chili Cornbread Skillet

1 green pepper, cored and diced
1 1/4 pound ground turkey breast
1 can (15.5oz) chili seasoned pinto beans(I just used 1 can of chili beans)
1 box (8.5 oz) cornbread mix
2 eggs

Heat oven to 400 degrees. In a 10" cast iron skillet heat 1 tbsp oil. Add green pepper and cook 5 minutes. Stir in turkey, and 1/2 tsp pepper and cook 5 minutes breaking up into crumbles. Stir in beans and heat. Remove skillet from heat. Stir 2 tbsp of the dry corn muffin mix into the mixture in the skillet. Pour the rest of the corn bread mix into a bowl. Add the eggs and 1/4 cup water and stir till combined. Pour over chili mix in skillet and top with a little black pepper. Put on a cookie sheet to catch any drips as it cooks and bake at 400 degrees for 20 minutes or till top is browned. Let cool about 5 minutes. 6 servings

Hi Cat
You don't happen to have a tried and true recipe you've used for corn bread from scratch do you?
I've never made it before and thought I'd give it a try

Here is the recipe I have used since I was first married; the only difference I do now is I don't use the shortening in it, I just leave it out; makes it a little more crumbly but still taste great! You can use 3 tbsp oil in place of the shortening if you wish. I mostly use a cast iron skillet to bake this in rather than the 8 x 8 x 2" pan.

1 cup yellow OR white cornmeal
1 cup all purpose flour
2 tbsp white sugar
4 tsp baking powder
1/2 tsp salt
1 cup milk
1/4 cup shortening
1 egg OR 2 egg whites

Heat oven to 425 degrees. Grease 8 x 8 x 2" pan with nonstick cooking spray. Blend all ingredients about 20 seconds. Beat vigorously 1 minute. Pour into pan. Bake 20 to 25 minutes or till golden brown.

The recipe I ended up making was similar to your recipe cat.
I mixed in a cup of grated cheese and parsley and on top I poped more grated cheese and sprinkled on paprika, the mix made 12 large muffins, we ate a few and froze the rest.
I've had my cous cous and tried polenta ... gotta figure out what my next new food is to try, LOL

Sounds good Bilby; in the past I have added some shredded cheese to mine, but since DH has to eat fat free that type of cheese just doesn't do some things justice and it is better just not even attempting! LOL
