View Full Version : ISO Banana Cookie & Icing Recipe

I'm looking for a recipe for a Banana flavored cookie and some icing to put on top. The icing needs to be the kind that gets hard so that the cookies will be able to travel by mail.
I found one on the internet and tried it, but they came out more like little round pieces of banana bread. My friend isn't a big fan of banana bread but wants real cookies, banana flavored.
Can anyone help?
I have a feeling not many people have made banana cookies but I though it didnt hurt to post and I might get lucky

Well, while it isn't storming right now I thought I'd post the icing recipe; haven't found the cookie recipe I'm looking for yet.
This icing dries into a hard glossy finish. You want to quickly ice the cookies with it; the best way to work with this one is to make your icing and dip them into into and put them on a wire rack to dry; you'll get almost a "glaze" finish! Be sure to put wax paper under them to catch any drips!
1 cup confectioners sugar
3 1/2 tsp milk
10 to 15 drops food coloring
1/4 tsp vanilla extract
2 tsp light corn syrup
Stir the sugar, milk, food color and extract together in a small bowl till smooth. Stir in the corn syrup till icing is smooth and glossy thick. Dip one side of cooled cookies into the icing and place on wax paper or racks. Allow the iced cookies to dry thoroughly before stacking them. To make more than one color of icing just use separate bowls for each color.

Okay, I came across this one in my file and I have it marked good, but I honestly can't remember the last time I made it...maybe I should start writing the dates I prepare something right on the recipe cards! I still am looking as this isn't the one I'm thinking of so I'll post this one and look some more! LOL
Banana Sugar Cookies
5 tbsp softened butter
3/4 cup sugar
1 egg
1 tsp banana extract
1 2/3 cups all purpose flour
1 tsp baking powder
1/4 tsp salt
Beat the butter and sugar till creamy with an electric mixer. Add egg and banana extract, mixing well. In another bowl whixk together flour, baking powder and salt. Gradually stir flour mixture into butter and sugar till dough forms. Wrap dough in plastic and chill 2 hours in refrigerator. Preheat oven to 350 degrees. On a lightly floured surface roll the dough to 1/4 or 1/8" thick. Cut out cookies with a round cookie cutter (you can use any shape really) dipped into flour. Reroll till all dough is used. Put cookies 1" apart on parchment lined cookie sheet. Bake about 10 minutes. Transfer to wire rack to cool.

Here is the one I was thinking of, but I have never iced these; guess it would work, but the first cookie recipe ices very well with the icing I posted. So if you make these and ice them let me know how that turns out! These will taste like banana bread, but feel like a cookie with crisp edges and all! Hope some of this works for you~
Banana Oatmeal Cookies
1 cup all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1/4 cup mashed banana
1 egg
1 tsp vanilla
1 1/2 cups old fashioned OR quick oats (not instant)
1 cup mini chocolate chips
Preheat oven to 350 degres and line a baking sheet with parchment paper.In a small bowl, whisk together flour, baking powder, baking soda and salt.In a large bowl, cream together the butter and the sugars. Beat in egg and banana, followed by the vanilla extract. Gradually by hand add in the flour mixture. Stir in the oats and chocolate chips.Drop dough by tablespoonfuls onto prepared baking sheet.Bake for 11 to 14 minutes at 350 degrees till set and lightly browned.Let cookies cool for about 5 minutes on the pan before transfering them to a wire rack to cool completely.Makes 2 dozen cookies.

Thanks Cat Lover! These sound perfect! It will be a bit before I make them since I ust sent him a box of a less desirable batch. But I'll let you know how they turn out once i make them.

I found a site www.allrecipes.com (http://www.allrecipes.com) where people can post their recipes and also try recipes and rate them. This site has several recipes for banana cookies. From sugar to oatmeal and frosted too.

How about using your favorite sugar cookie recipe and using banana extract instead of vanilla. Same for frosting. The moisture in real banana might make the cookies more prone to mold.
