MINTS WITH CREAM CHEESE
1-1/2 oz. cream cheese (room temperature)
1/8 tsp. oil of peppermint (any flavor, adjust to taste)
1-2/3 cups confectioners sugar
food coloring (any color)
granulated sugar
Molds of your choice
Incorporate the cream cheese, add confectioners sugar, flavoring and coloring. Knead with hands until it is similar to pie dough in consistency. Roll into balls approximately the size of marbles. Dip balls in small amount of granulated sugar. Press sugar side down in mold and remove immediately. For variation, you can make the mints plain white and decorate later with food coloring and a paintbrush, sponge, etc.
