2-3 T oil
3 boneless pork loin chops, thinly sliced
1/2 medium onion, finely chopped
1/2 red bell pepper, finely chopped
16 snow peas, each cut in half
4 c cold cooked rice
16 peeled, cooked prawns
1/2 c unsalted roasted cashews
1 14 oz can cut young corn
2 T soy sauce
freshly cracked black pepper to taste
3 green onions, finely chopped

Heat the oil in wok or large skillet over medium-high heat. Add the pork and cook through. Mix in the onion and bell pepper and cook 2 minutes. Add the snow peas and cook 1 minute more. Mix in the remaining ingredients and stir-fry 3 to 5 minutes, or until all the ingredients are well heat through. Serve immediately. Makes 4 servings.

This sounds like a great recipe.

Any tips on how to make it without a gas cooktop. I'm in a rental house at the moment with a dreaded electric cooktop, and woks just don't do that great.

I have an electric stove and I just use a large cast iron chicken fryer pan. You can also buy a deep almost wok shaped nonstick skillet which works well on a electric stove; I have one of those I use sometimes. If nothing else just use a deep Dutch oven.

This recipe sounds good, think I'm going to try it one day when DH has the fat grams left to use for the day!
