View Full Version : Sweet or Savory Cream Cheese Muffins

Cream Chees Muffins

2 8oz cream cheese
1/2 cup splenda (http://www.netrition.com/cgi/product_categories_display.cgi?categories=SWEET,SU CR)
1 or 2 eggs
1/2 tsp vanilla extract (http://www.netrition.com/cgi/goto.cgi?aid=281&url=now_vanilla_extract_page.html)

Soften cream cheese, about 40 seconds in microwave, mix ingredients, bake in oven at 350 for about 18 minutes. Makes up to 12.

*For Peanut butter version, add one tablespoon of peanut butter to mixture before baking

Savory Cream Cheese Muffins

2 8oz cream cheese, chive and onion flavor if you can find it
1 egg
2 tbs chives, sprinke of parsley flakes
crumbled cooked bacon

cook exactly the same way as sweet ones.

I was looking for a muffin to make for tomorrows "road" breakfast so I think I'll make your cream cheese mufins with peanut butter. All I'll have to do is sub fat free cream cheese and use all egg whites; thanks for sharing!

I've been making a bread which includes cream cheese in my bread machine recently. You toss in nuts and raisins and it's a not so sweet cross between Irish soda bread and a traditional raisin bread. Love it!

I liked the muffins pretty good, DH didn't care for the much, but then he isn't a fan of cream cheese! LOL

VIcki2, care to share your recipe for the bread in the bread machine you are talking about?

For those of you who use bread machines, you'll know about the order of the recipe ingredients and otherwise how to do this.

For a mediuam loaf:

3 tbs milk
2/3 c. cream cheese
2 1/2 tbs butter
2/3 egg
2 tbs sugar
2/3 tsp salt
2 cups bread flour
1 1/2 tsp yeast


I add the raisins and walnuts or whatever other dried fruit you want ...dried cranberries are great!

Those sound really good, vicki. Thanks for sharing the recipes. My husband believes that anything is good as long as you have cream cheese, so he'll enjoy both of those!
