A friend sent me these recipes she got out of BH&G February magazine. She said they were both very good; I haven't made them, but she's a good cook so if she liked it I trust it very much! She said she made a few changes to the original recipe, with the spices.

Sloppy Joes

2 pounds extra lean ground round
2 16 oz jars salsa
3 cups fresh mushrooms, sliced
1 1/2 cups carrots, shredded
1 1/2 cups green sweet peppers, chopped
1/3 cup tomato paste
2 tsp dried basil, crushed
1 tsp dried oregano, crushed
1/2 tsp cayenne pepper
4 cloves garlic, minced
6 kaiser buns split

Cook beef till brown and break meat into crumbles with a potato masher. Drain any fat. In a 6 qt slow cooker add beef and all remaining ingredients except buns. Cover and cook on HIGH for 5 hours or LOW for 10 hours. Reserve 5 cups pof mixture for tacos the next night. Serve over buns. 6 servings

Taco Salad

5 cups beef mixture from sloppy joes
1 15 oz can black beans, rinsed & drained
1 2 1/4 oz can sliced ripe olives, drained
1 tsp taco seasoning
1 head iceberg lettuce, cut into 6 slices
1 cup cheddar cheese, shredded
1 cup tomatoes, chopped
1/3 cup fat free sour cream

Stir together meat mixture, beans, olives, and seasoning. Heat to boikling in a saucepan. Simmer covered 10 mionutes. Place lettuce on plates and top with meat mixture. Top wioth cheese, tomatoes, and sour cream. Add tortilla chips on top. 6 servings

What a nice idea! I like making two meals out of one, too. My favorite one is to make a huge batch of chili for one night's meal. With the leftover chili, I add cooked elbow macaroni and turn it into chili mac. It freezes well so that I won't have to serve it two nights in a row. Adding mushrooms for the mac works great, too.

I like your idea also;I take it in your chili you don't put spaghetti? We wouldn't know our chili without it! LOL
