View Full Version : Pork Roast with Potatoes & Kale

4 bunches kale
2 1/2- 3 pound roast
Flour
3 tbsp oil
4 large potatoes, peeled & quartered
2 medium onions, quartered
3 tsp salt
1 /2 tsp pepper
small section bacon cut into about 8 cubes
water
Rinse kale and break each leaf into 3 pieces. Place in pressure cooker with 5 cups water. Add diced onion, salt, pepper and bacon. Heat kale on high for several minutes till leaves begin to wilt. Place lid on pressure cooker and cook 15 minutes. Discard bacon. Set kale in another bowl, rinse & dry pressure cooker. Heat oil in pressure cooker and flour roast on all sides. Brown on all sides; drain oil. Put rack inside pressure cooker and put roast on rack and covber halfway with water. Add diced onion, 1 tsp salt and 1/2 tsp pepper. Pressure cook 45 mi utes and remove from heat and allow cooker to cool. Once cool take roast out and remove from bone if using bone in. Place roast back into pot with potatoes on top. Add remainder of salt and pepper and replace lid. Pressure cook another 15 minutes. To make gravy, remove rack from pressure cooker. Take 1/2 cup of water anmd rinse bits of meat and onion off rack and into bottom of pot with meat juices. Increase heat and mix 3 tbsp flour with 3 tbsp water. Add mixture to heated liquid and whick till smooth. Serves 4
