View Full Version : Fat Free Coconut Milk (For Recipes)

1 c fat-free half-and-half
1/4 t coconut extract
1/2 T cornstarch
1 t sugar

Combine all ingredients with a whisk. Whisk once again before adding to your recipe to ensure all the cornstarch is incorporated from the bottom of the bowl. This recipe is a starting point as a substitute for 1 cup canned coconut milk for adding to recipes.

Oh thank you for posting this! My DH has to have no more than 30 grams of total fat per day so cooking for him is intersting. We've done if fo so many years it isn't a problem much any longer, but I'm always interested in new things to try!

I came across this recipe by a freind who both our husbands are diabetics and I eat low fat. You may have to alter the baking podwer, which I do for it is too crumbly, and I gues one could subs but I have not tried it yet.

Legal Cornbread:

1 cup Cream of Wheat 1 cup low fat bettermilk
1 cup self-rising flour 1/2 tsp.salt
4 tsp. baking powder 2 egg whites
1/2 cup Canola oil.

Preheat oven to 400* bake 35-40 minutes until brown.

I no longer buy cornmeal. We can't tell the difference. I hope if anyone tries this they like it. Each ahs their on taste however.
