I love peanut butter! I even find myself grabbing a spoon and dipping into the jar and eating just that way! My DH had a friend once that would eat anything with peanut butter in it. I made him a "cookbook" of LOTS of my recipes that contain it. Is there someone else out there that just loves the stuff? Let's share our peanut butter recipes here; doesn't matter if it is a main dish, side dish, bread, or even a dessert! Here's one recipe to get us started; I can't wait to see yours!

Peanut Butter Pudding Cake

1 cup all purpose flour
1 1/4 cups light brown sugar, packed, divided
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/3 cup peanut butter
1/4 cup chopped roasted peanuts, optional
2 tbsp vegetable oil
1 tsp vanilla
1 1/2 cups hot water

In a bowl, combine flour, 3/4 cup of the brown sugar, baking powder, and salt. Stir in the milk, peanut butter, peanuts, oil, and vanilla. Stir till blended. Spread batter in a greased 8" square baking dish. Sprinkle with remaining 1/2 cup brown sugar. Slowly pour hot water over the top. Bake in a preheated 350 degree oven for 45 minutes. Serve peanut butter pudding cake warm with a scoop of vanilla ice cream.

I love Smuckers natural p-nut butter on celery or mixed into vanilla ice cream! YUMMY!!

I am also a JIF fan, right on the spoon, out of the jar. ;)

This is a very simple recipe but just the right amount of peanut butter taste.

Peanut Butter Pudding

2 cups cold milk
1/2 cup chunk style peanut butter
1 pkg. instant pudding mix 4 serving size (any flavor) ~ I especially like any chcolate flavor , but vanilla works well too

Pour milk into a bowl. Add the peanut butter and the pudding mix and beat slowly just till blended. Pour into individual dishes and let stand to set about 5 minutes. Chill till serving time. Good garnished with choclate sprinkles or chopped peanuts. Serves 4

My favorite pb during the hollidays are those pb trees or bp eggs but I love the pb cups too. I once got the recipe for the pb filling in pb cups that was quick and easy to make. I want to sit down and eat the entire bowl myself! I'll see if I can find my recipe. We moved recently and a lot of stuff is still in storage.
I just looked and the recipe for the filling is eluding me at the moment but I'll look again soon. I also have a recipe for BP Fudge with only 4 or 5 ingredients in it. I think that one is buried in storage though. It was in a Taste of Home booklet on the magazine stand at the grocery checkout a while back and it had a lot of simple recipes. I think they had 5 ingredients or less in all the recipes and that's what first caught my eye.

Peanut Butter Granola Bars
From The Essence of Emeril

4 tbsp unsalted butter
1/4 cup honey
3 cups old fashioned rolled oats
1/2 cup slivered almonds
1/2 cup roughly chopped pecans
1/4 cup hulled green pumpkin seeds
1/4 cup unsalted sunflower seeds
1/2 tsp ground cinnamon
1/4 tsp salt
1 cup raisins
1/3 cup light brown sugar
1/2 cup light corn syrup
1/2 cup creamy peanut butter

Preheat oven to 325 degrees . Lightly grease an 8 x 8" baking dish and set aside. In a small saucepan melt butter with honey over low heat while stirring. In a large bowl stir together oats, almonds, pecans, pumpkin seeds, sunflower seeds, cinnamon and salt. Pour butter mixture over oat mixture and stir till combined well. On a large baking sheet, spread the granola evenly in a thin layer. Bake, stirring every 5 minutes to keep from sticking or burning, till golden brown and crisp about 20 minutes. (Do not overcook; the granola will crisp more when cooled.) Cool the granola in the pan on top of the stove and stir in the raisins. When the granola is completely cooled, place in a large bowl. Combine the brown sugar, corn syrup, and peanut butter in a small saucepan over medium high heat. Stir constantly till the sugar is dissolved and the mixture is at a boil. Remove from the heat and pour the mixture over the granola, stirring to coat well. Cool slightly and press into the prepared baking dish and let cool completely and harden. Cut the mixture into ten 1 1/4 x 4" bars and serve at room temperature. (The bars may be kept in an airtight container at room temperature for up to 1 week.)

OMG! I think I have hit the jackpot. I love, love, love peanut butter. I have never tried peanut butter muffins before, but I might just have to change that now. Thank you SO Much for posting all of this!!
Do you have to use chunky? Does it make a difference? I use Skippy Natural, and it only comes in a creamy variety.
Thanks again!!

You can use creamy interchangeably in most all recipes calling for peanut butter. Hope you like them as much as we do!

Here's another peanut butter recipe!

1 cup sifted confectiners sugar
2 tbsp evaporated milk
1/2 cup coarsely chopped pecans

2 tbsp dark molasses
1/4 cup graham cracker crumbs

Cream together peanut buter and sugar and then beat in the evaporated milk. Shape into a 1" roll. Combine pecans, coconut, 1/3 cup cracker crumbs, melted margarine, and molasses. Pat this mixture around the roll. Then roll in 1/4 cup cracker crumbs and wrap in wax paper and chill. Slice. Makes 25 to 30 pieces!
