1 pound pumpkin rind, cut into 1/2" pieces
1 1/2 cups sugar
Grated rind of half lemon
Juice of 1 lemon
1 ozcandied ginger, finely chopped
Sprinkle sugar over pumpkin rind and let stand overnigth in covered bowl in refrigerator. Add lemon rind, lemon juice and candied ginger. Pour mixture into a aucepan and cook slowly over low het till rind is clear and mixture coats a spoon. Spoon into sterilized canning jars and seal.
