This restaurant has been in business since 1918; it has changed it's original name from Captain Tom's Seafood Restaurant where it used to have a fleet of fishing boats that would cruise as far as tNassau for fish. The fish was origianlly sold in his fish market and served in the upstairs dining room. It is still located in Miami, Florida. One of my SIL recently ate there and had this and got the reipe!

1 1/2 pound lobster, boiled
6 stuffed olives, chopped
3 oz mushrooms, chopped
1 oz sherry wine
1 oz fresh Parmesan cheese, grated
5 tbsp rich cream sauce

Remove lobster meat from shell and dice it. Add some butter to moisten the olives, mushrooms, salt and pepper to taste. Braise 5 minutes till hot. Add the wine. Blend with cream sauce and half of cheese. Fill empty shell with mixture and top with remaining cheese, melted butter and paprika sprinkled on top. Bake in a 350 degree oven till brown on top. 1 serving
