Does anyone have any tips on making moist chicken in the crockpot?? Every time I try this or any chicken receipes in the crockpot they usually come out bone dry. I have tried everything I can think of but I am having the worst luck. Thanks...:o And one other question...how does one get an icon on here? (the personal ones that is)

There are many reasons this could be happening:
The crockpot cooks too "hot"
You are cooking the chicken too long
You're opening the lid and letting all the steam out
Not enough moisture in the recipe

Have you tried this recipe in a different crockpot? Have you made it successfully before?

As to the icon, go to USER CP and choose EDIT AVATAR. There are many to choose from!

Barb hit the nail on the head. Try cooking the chicken on a lower temp for a shorter period of time.

To get my personalized picture, I went to the user CP and then to either the avitar or profile picture. It should give you the option to browse a picture from your computer that you can download.

Good luck!

Is that a whole chicken or chicken pieces?
I've not had trouble with pieces being dry but if it's whole chicken I've never tried so sorry have no ideas .

No matter how I cook chicken, I always brine it first. I have not made a dry chicken since.
the basic recipe is:dissolve 1 cup or kosher salt and 1 cup brown sugar or white sugar in 1 gallon hot water. You can add whatever spices you want to the brine including citrus to the brine. Let it cool completely and complete submerge chicken in brine. You can brine a whole chicken for up to 24 hours and pieces up to 8. Rinse chicken with cold water and dry and proceed on with your recipe.
Hope this helps,
Joy

Joy, brining is an excellant idea. I hadn't even thought about that. Thanks for the tip.

I've always done that with turkey with terrific results. I should try it on chicken as well. Thanks for the tip!

I've never heard of brining (I've heard of tinned fish in brine) but not for other meats.

Just curious as to how this process helps hold in the moisture?

By soaking it in a brine solution, the meat will absorb some of the moisture and flavor. I hope that explains it okay.

Bilby, my theory is "salt makes you retain water!" It seems to work on poultry as well ;)

I cooked frozen chicken breasts in my crockpot all the time. I would assume that the water in them from being frozen helps to keep them moist.

Also, if my chicken is not frozen, try adding some chicken broth or even water. I have never had any trouble this way.

Good Luck!

I have always made sure I cover the meat with water. If it's a fattier chicken I use a little less water and the melted fat makes up the difference.
