Some of us were talking about different ways to use ground beef in recipes, whether you use extra lean or regular ground beef or anything in between would be your own preference. So this can be a "one stop place" for any recipe using ground beef. Have any to share?

Here are a few I've used over the years.

Hamburger Stuffed Cabbage

Cook 10 large cabbage leaves in boiling water about 5 minutes or till tender. Brown hamburger meat,1/4 cup minced green pepper, 1/2 cup chopped onion,and 1 cup cooked rice. Mix all together except cabbage leaves.

1 cup water
1 tbsp wine vinegar
1/2 tsp dry mustard
1 tbsp brown sugar
6 whole cloves
2 bay leaves
Bring to a boil and remove from heat but keep warm. Take cabbage leaves and place a heaping tablespoon of the meat mixture in each cabbage leaf, roll, tie with kitchen string and place in the hot sauce. Simmer 30 minutes. Serves 4

Hamburger Tomato Balls

Mix:
1 1/2 lbs hamburger
1 egg, slightly beaten
2 tbsp minced onion
1/4 tsp pepper
Form meatballs 1" in diameter and brown on all sides. Set aside. Melt 2 tbsp margarine, stir in 3 tbsp flour and add 2 cups crushed tomatoes, stirring constantly till thickened.

Add: 1/2 tsp pepper
1/2 tsp prepared mustard
1/2 cup grated cheese(I always used mozzarella)
1/4 tsp worcestershire sauce
1 tbsp sugar
Stir till cheese melts and pour over meatballs. Cover and simmer about 20 minutes Serves 6

Hamburger Noodle Casserole
Brown 1 pound hamburger till crumbly. Add:
1 /12 cups sliced onion
1 crushed garlic clove
1 28 oz can tomatoes
1 6 oz can tomato paste
1 6 oz can water
1 tsp worcestershire sauce
1/2 tsp paprika
2 bay leaves
1/2 tsp hot sauce
1/2 tsp thyme
1/4 tsp marjoram
Bring to a boil and remove from heat. Place half the mixture into a 2 1/2 qt casserole. Add 8 oz uncooked noodles and top with remaining meat mixture. Bake at 375 degrees for 45 minutes. Sprinkle with parmesan cheese befoire serving. Serves 6

Hamburger Soup


Saute 1 cup chopped onion in 2 tbsp olive oil till soft. Add 1 1/2 pounmds hamburger and cook till no longer pink. Break up into smaller crumbles. Add:

1 15 oz can diced tomatoes
3 cans condensed beef broth
2 15 oz cans water
1 cup sliced carrots
2 bay leaves
2 celery stalks, chopped (include leaves)
6 sprigs parsley
1 tsp pepper
1/2 tsp thyme

Cover and simmer about 1 hour till vegetables are tender. Serves 6

Pizza Burgers

1 pound lean ground beef
1 can (15 oz) pizza sauce
1 tsp dried oregano
1/2 medium onion
1/2 medium green pepper
1 oz sliced pepperoni
6 hamburger buns, split
1/3 cup chredded mozzarella cheese
1/2 cup sliced fresh mushrooms

In a skillet brown the beef and drain. Stir in the pizza sauce and oregano. In a food processor, chop onion, green pepper, pepperoni and add to the beef mixture. Simmer 25 minutes. Spoon mixture onto buns and top with cheese and mushrooms. 6 servings

Hamburger Sukiyaki

1 large sliced onion
1 tbsp olive oil
1 pound lean ground beef
3 stalks celery, thinly sliced
6 large fesh mushrooms, thinly sliced
1/4 pound green beans, sliced lengthwise
1 5 oz can bamboo shoots, drained
1 tbsp sugar
1/ cup reduced sodium soy sauce
1 chicken bouillon cube
1/2 cup water
1/2 pound fresh spinach leaves

Saute onion in oil and add ground beef, breaking it up as it cooks. Stir remaining ingredients except spinach into meat mixture, cover and simmer 10 minutes. Clean and remove stems from spinach and arrange on top of meat and vegetables. Cover and simmer 5 minutes longer or till spinach wilts and vegetables are crisply tender. Serve with rice. Serves 6

These are good on the grill but work equally well in the broiler


Lumberjack Hamburgers

1/3 cup margarine
2 cups onion, chopped fine
1 cup green pepper, chopped fine
3 pounds lean ground chuck
2 eggs, beaten
3 tbsp worcestershire sauce
1/2 tsp pepper
3/4 cup chili sauce
1 1/2 tsp oregano
1 cup grated sharp cheddar

Melt margarine in a skillet and add onions and green pepper and cook till tender. Combine beef, eggs, worcestershire, and pepper. Mix lightly. Shape intop 12 long thin patties about 6 x 3. Spoon green pepper mixture ontp center of 6 patties. Top each with 2 tbsp chili sauce and 1/4 tsp oregano. Cover with remaining patties and press and seal the edges. Broil or cook on the grill 3" away from heat source till done to your desire. Sprinkle cheese on top of patties and cook just till cheese melts. Serve on bread; pumpernickel is especially good with these.

Salisbury Steak
This recipe came from an insert in one of the Taste of Home magazines; it's pretty good!

1 egg beaten
1/2 cup soft bread crumbs
1/4 cup onion, chopped
2 tsp worcestershire sauce
1/2 tsp garlic powder
1 pound ground beef

GRAVY
2 tbsp all purpose flour
1 can (14 1/2 oz) beef broth
1/4 cup catsup
1 tbsp worcestershire sauce
1/4 tsp dried basil
1 jar (4 1/2 oz) sliced mushrooms, drained

Inm a bowl combine the first five ingredients. Crumble beef over this and mix together. Shape into 4 patties and put in a shallow microwave pan. COver and microwave 6 minutes or till nearly done. In another bowl combine flour and broth till smooth. Stir in catsup, worcestershire sauce, basil and mushrooms. Turn the patties and drain. Pour gravy over patties. Cover and microwave again about 6-8 minutes or till gravy thickens. Gently stir gravy and cover and let stand about 5 minutes. Good served over mashed potatoes. 4 servings

Beefy Pasta Skillet

This is a Campbell's recipe, but it reminds me a lot of a Hamburger Helper Dinner

1 pound ground beef
1 onion, chopped
1 can (10 3/4 oz) tomato soup
1/4 cup water
1 tbsp worcestershire sauce
1/2 cup shredded cheddar cheese
2 cups cooked corkscrew pasta

Cook beef and onion in skillet till browned, drain. Add soup, water, worcestershiure sauce, cheese and pasta and heat through. Serves 4

Here one that I've found but not tried it yet.

GROUND BEEF CHOW MEIN
3/4 lb. ground beef
1/2 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. soy sauce
1 can tomato soup
1/2 c. water
1 can chow mein vegetables

Cook meat and onions until brown.
Add salt, pepper, soy sauce, soup and water.
Cook for 10 minutes over medium heat.
Add chow mein vegetables, heat thoroughly.
Serve over chow mein noodles and rice.
Serves 4 to 6.

The Hamburger tomato balls sound totally awesome. I think I shall try those tonight. I am a new cook just starting out, but I would love to hear about some more of these recipes if anyone can think of anymore. These are just great

Glad you are enjoying them gabsmom123! Here's one that a lady at my MIL's church used to bring for a potluck; it's good and unusual!

Tacos in Pasta Shells

18 jumbo pasta shells 2 tbsl margarine, melted
1 1/4 lb ground beef
1 (3 oz) pkg. cream cheese with chives, cubed
1 tsp chili powder
1 cup taco sauce
1 cup cheddar cheese, shredded
1 cup monterey jack cheese, shredded
1 1/2 cups tortilla chips, crushed
chopped green onion for garnish

Cook pasta shells according to pkg. directions. Drain shells and toss with melted margarine. Brown ground beef, stirring to crumble and drain. Stir in cream cheese, chili powder and simmer 5 minutes. Preheat oven to 350 degrees. Fill shells with beef mixture and arrange in a 13 x 9" pan that has been sprayed with nonstick cooking spray. Spoon taco sauce over shells and cover and bake 15 minutes. Uncover and top with cheeses and tortilla chips. Bake 15 minutes more; sprinkle with green onions and serve.

Cheesy Beefy Dip

1 pound of hamburger meat
Olive oil spray
1 pound of Velveeta cheese, cut into chunks
2 tsp of Worcestershire sauce
1/2 tsp. of chili powder or to taste
1 10 oz can of tomatoes with green chilies
Fritos "Scoop" chips

Brown the hamburger in a pan coated with olive oil spray. Cut the hamburger meat into chunks as it browns. In a crock pot, put in the Velveeta cheese, Worcestershire sauce, chili powder and tomatoes. When the burger is cooked thoroughly add that too. Cook on medium in your crock pot for one hour. Keep warm and serve with scoops

Soy Noodles and Beef (sooo easy)

Brown ground beef and add chopped garlic and onion. Flavor with soy sauce and combine with cooked egg noodles. Simple yet flavorful.

Here's one that is easy on the budget!

Texas Hash

2 large onions, sliced
2 green peppers, chopped
1 can sliced mushrooms, drained
1 pound ground beef
2 cups canned tomaotes
1/2 cup uncooked rice
1 tsp chili powder
1/2 tsp pepper
Cook onions and green pepper in a small amount of oil till cooked. Add mushrooms and beef and saute till beef is browned. Add tomatoes, rice and seasonings. Put into a greased casserole abd bake at 375 degrees for 45 minutes or till done.

Amish Yum-A-Setta

1 1/2 lb. ground beef
1/4 cup chopped onion
Salt and pepper
1/8 cup brown sugar
1 10 oz. can tomato soup
12 oz. egg noodles
1 can cream of chicken soup
8 oz. Velveeta cheese (sliced thin)

Brown meat with onion, salt, pepper, and brown sugar.
Add the tomato soup. Set aside.

In the meantime, cook and drain your egg noodles. Mix the
noodles with the cream of chicken soup.

Layer the meat mixture with the noodle mixture in a baking
dish and put the slices of Velveeta between layers. Bake at
350 degrees for 30 to 45 minutes until bubbly.

Here's another recipe my grandmother used to make:

Layered Meat Loaf

1 1/2 pounds ground beef
1 tsp salt
1/2 tsp pepper
1 egg
1/2 cup bread crumbs
1/2 cup milk
Combine ingredients ina bowl and blend well. In a loaf apn alternate meat and dressing layers starting and ending with meat mixture ( 2layers meat and 1 layer dressing). Bake at 350 degrees 50 to 60 minutes.

Dressing

2 cups soft bread cubes
1/2 cup celery, chopped
1 egg
1 tbsp instant minced onion
1 tbsp butter, melted
1 tbsp parsley, minced
1 tsp salt
1/2 tsp pepper
Combine all ingredients in a bowl.

I hope this recipe turns out the way you remember it! I made it last night and it was fabulous. I would use less than 12 oz. of noodles next time, though... maybe like 8 ounces. I did a noodle mixture layer (half), then half of the meat mixture, then half the velveeta slices. After that I did the rest of the noodles, and then the cheese, ending with the rest of the meat. I didn't want the cheese as the top layer. It worked well.

Thank you for the layered meatloaf recipe, I'll have to try that one!

Meatball Hoagies

Meatballs
2 eggs, beaten
3 tbsp milk
1/2 cup dry bread crumbs
1 pound ground beef
1/2 tsp pepper

8 French style rolls

Sauce

1/2 lb. Italian sausage
1/2 cup chopped onion
1/2 cup chopped green pepper
1 cup water
1 (8 oz) can tomato sauce
1 (8 oz) can tomato paste
2 tbsp sugar
1 tsp garlic salt
1/2 tsp oregano
1/4 tsp parsley flakes

In a bowl combine the eggs and milk. Stir in the bread crumbs, and the pepper. Add ground beef and mix well. Shape into 1" thick meatballs and brown in a skillet and remove. In same skillet cook the sausage, onion, green pepper till browned and drain any fat. Stir in the water, tomato sauce, tomato paste, sugar, garlic salt, oregano and parsley flakes. Return the meatballs to the skillet. Cover and simmer stirring occasionally for about 15 minutes. Fill the rolls with meatballs and sauce. 8 servings

Wow, you have some great sounding recipes! Thank you again. I have one for meatball subs that I haven't made in ages, but I'm pretty sure the sauce is just a jar of spaghetti sauce... this homemade sounds much better!

One thing we do with hamburger is make taco salad, alot. It's not anything spectacular, it's very easy, but also VERY yummy, especially if we don't forget the avacados!!

Cherokee Casserole
(I donn't know how this got its name, but that is what it has been called since I found the recipe years ago)

1 pound ground beef
3/4 cup onion, chopped fine
dash pepper
1/8 tsp of each: garlic powder,thyme, and oregano
1 small bay leaf
2 1/2 cips canned tomatoes
1 can condensed cream of mushroom soup
1 cup instant rice
6 stuffed olives, sliced
3 slices American cheese, cut into 1/2" strips

Brown beef and add onion and cook till tender. Stir in ingredients in order given except 3 olives and the cheese. Bring to a boil and reduce heat and simmer 5 minutes stirrring occasionally. Spoon into a baking dish and top with cheese and broil till cheese melts and then top with remaining olives. Serves 4

This was given to me by a friend I made when we moved to Indiana; it's good!

Indiana Casserole

1 8 oz can mushroom pieces
1 can (15 oz) tomato sauce
3/4 lb lean ground beef
1/2 chopped onion
1 (15 oz) can tomato bits
1/2 tsp pepper
1 1/4 cups noodles, broken into pieces
1/2 lb grated American cheese
Drain mushrooms but reserve the liquid. Blend reserved liquid into tomato sauce. Saute beef till brown and push to one side of pan and brown onion lightly. Add tomaotes, tomato sauce mixture, mushrooms and pepper. Cover and bring to boiling; add noodles and stir. Reduce heat and simmer till noodles are done, about 30 minutes. Pour in to a greased casserole and sprinkle with cheese. Bak at 425 degrees till cheese has melted. 6 servings

Mashed Potato Beef Casserole Original recipe from Taste of Home;I made a few changes





2 bacon strips, diced
1 pound ground beef
1 large onion, finely chopped
1/4 lb fresh mushrooms, sliced
1 large carrot, finely chopped
1 celery rib, finely chopped
3 tbsp all purpose flour
1 cup beef broth
1 tbsp Worcestershire sauce
1 tsp dried tarragon
1 tsp garlic powder
1/2 tsp pepper
3 cups hot mashed potatoes
3/4 cup shredded cheddar cheese, divided
Paprika


In a skillet, cook bacon till crisp and drain, reserving 1 teaspoon drippings. Set bacon aside. Cook beef over medium heat until no longer pink and drain. Toss onion, mushrooms, carrot and celery in flour and add to skillet with the broth, Worcestershire sauce, tarragon, garlic powder and pepper. Bring to a boiland reduce heat. Simmer, uncovered, 15 to 20 minutes or tilll the vegetables are tender. Add baconand transfer to a 2 qt. baking dish that has been sprayed with a nonstick cooking spray. Combine potatoes and 1/2 cup of cheese and spread over beef mixture. Sprinkle with paprika and remaining cheese. Bake uncovered at 350 degrees for 20 to 25 minutes or till heated through. Broil 4" from the heat for 5 minutes or TILL bubbly. 4-6 servings.

Ground Beef Lo Mein

7 oz uncooked spaghetti
1/2 lb cooked extra lean ground beef
1 pkg 16 oz) frozen stir fry vegetables, thawed
1 (12 oz) jar beef gravy
1/2 tsp soy sauce
1/2 tsp garlic powder
1/2 tsp pepper

Cook spaghetti according to pkg directions. While that is cooking reheat beef in a skillet just till heated through. Add remaining ingredients and bring to a boil. Reduce heat and cover and simmer about 10 minutes or till vegetables are crisp tender. Drain the spaghetti and stir into the beef mixture. Makes 6 servings

Beef and Zucchini QUiche

1 unbaked 9" pie shell
1/2 pound extra lean ground beef
1 medium zucchini, shredded
3 green onions, sliced
1/4 cup mushroom slices
1 tbsp all purpose flour
3 eggs, beaten
1 cup milk
3/4 cup shredded swiss cheese
1 1/2 tsp chopped fresh thyme
dash pepper
dash of ground red pepper

Preheat oven to 475 degrees. Line pie shell with foil and fill with dried beans or rice. Bake 8 minutes ( the beans keep the pastry from puffing up as it bakes). Remove foil and beans and return pie shell to oven and continue baking 4 more minutes and then set aside. Reduce oven to 375 degrees. Brown ground beef in a medium skillet and drain. Add zucchini, onions, and mushrooms and cook stirring occasionally till vegetables are tender. Stir in flour and cook 2 minutes stirring constantly. Remove from heat. Combine eggs, milk, cheese and seasonings in a bowl. Stir into ground beef mixture and pour into crust. Bake 35 minutes or till a knife inserted near the center comes out clean. Makes 6 servings
