I love pumpernickel bread and it makes a great crouton for topping salads too; here's the recipe!~
Pumpernickel croutons
4 slices pumpernickel bread, cut into 1/2" cubes
1 tbsp olive oil
1 tbsp paprika
2 cloves garlic, peeled and minced
Toss all the ingredients in a mixing bowl. Place on a baking sheet. Bake at 450degrees for 7 to 8 minutes or till browned, watching carefully to avoid burning them; remove immediately and let cool.Makes about 2 cups
