1/2 cups whole wheat pastry flour
1 tbsp sugar
2 tsp baking soda
2 egg whites,beaten
1 1/2 cups buttermilk
1 tsp vanilla
1 cup fresh blueberries, rinsed
In a large bowl, whisk together the whole wheat pastry flour,sugar, baking powder and baking soda.n a separate bowl, whisk together the egg, buttermilk and vanilla.Whisk the wet ingredients into the dry until just smooth. Stir in the blueberries.Lightly grease a griddle with nonstick spray. Heat the griddle till droplets of water splatter when you sprinkle them on the surface. Cooking 2 or 3 pancakes at once, drop batter 1/4 cup at a time onto the griddle. Let cook till bubbles form on the surface, about 1 1/2 minutes. Flip to cook the other side until golden, about 1 minute. 4 servings
