1 1/2 cups all purpose flour
1 tsp salt
2 tsp ground cinnamon
1/2 cup butter,softened
1 tsp ground cloves
1 cup white sugar
2 1/4 tsp ground ginger
1 tsp baking soda
1 tsp orange extract
1 cup applesauce
FROSTING
8 oz cream cheese, room temperature ( Iused fat free cream cheese)
1 tsp vanilla extract
2 1/2 cups confectioners sugar
1/2 tsp orange extract
Preheat oven to 350 degrees. Grease and flour a 9" loaf pan or a square baking pan. In a medium bowl, stir together the flour, cinnamon, cloves and salt and set aside. In a large bowl, cream butter and sugar till light and fluffy. Dissolve baking soda into applesauce and mix into creamed butter. Add flour mixture and mix till smooth. Pour the batter into a loaf pan. Bake for 40 to 50 minutes or till a toothpick inserted in the center comes out just slightly sticky. (Be careful not to overbake, for this cake can dry out easily)
FROSTING
Beat the cream cheese till light and fluffy. Beat in the vanilla and gradually beat in the powdered sugar. Frost the cake when it is completely cooled.
