Cream Cheese Topping
1/2 cup cream cheese, softened
1/4 cup sugar
1 tbsp flour
1 egg
1 cup miniature chocolate chips

Garnish
½ cup semisweet miniature chocolate chops
1/2 cup chopped pecans
1/3 cup shredded coconut, optional
1 tbsp sugar

Muffins
1/4 cup cocoa, measured, then sifted
1 cup brown sugar
1 tsp baking soda
1 1/2 cups flour
1/4 tsp salt
1 cup instant coffee, room temperature
1/3 cup oil
2 tbsp vinegar

Preheat oven to 350 degrees. Line 12 muffin cups with paper liners .For Topping, blend all ingredients together in given to make a smooth batter-like mixture.For muffin batter, measure all dry ingredients together. Stir in coffee, oil, and vinegar. Blend wet and dry ingredients till mixed. Spoon batter into prepared muffin cups(they should be about 3/4 full). Spoon on 2 tablespoons each of topping. Garnish with a small sprinkle of additional chocolate chips, chopped nuts, and granulated sugar. Bake about 25 minutes. Let cool in pan, 45 minutes before removing (they tend to be quite fragile).Makes 12 muffins
