I used to make my cakes and then put canned froting on most of them, but now that Trans Fat has to be listed on the labels of foods I'm concerned about how much Trans Fat is really in those canned frostings! If you are concerned and haven't looked take a look! I've checked every brand and they are pretty much all the same. So I'm going back to making my own frostings again. I'm looking for a wide variety of frostings that I can make even lower fat tham most regular recipes. Would you share your frostings recipes here?

Chocolate Espresso Buttercream
2 1/2 cups confectioners' sugar
3 tbsp cocoa
1/4 cup butter
2 tbsp heavy cream
1 tsp vanilla
hot espresso
In a mixing bowl, cream confectioners' sugar, cocoa, and butter. Beat in heavy cream and vanilla. Add small amounts of espresso till desired spreading consistency is reached. Yum-Yum!!!

~~ MAPLE FROSTING ~~
2 cups Icing sugar (sifted);
2 tablespoons Soft butter
3 tablespoons Maple syrup
1 tablespoon Sour or whipping cream
-= Instructions =-
Combine all the frosting ingredients in a bowl, beat with an electric mixer until smooth, creamy and of spreading consistency.

~~ VANILLA FROSTING ~~
1 1/2 cups Powdered sugar
1 -(up to)
2 tablespoons Milk
1/2 teaspoon Vanilla extract

**CHOCOLATE GLAZE**
3 tablespoon butter or margarine
2 tablespoon unsweetened cocoa powder
2 tablespoon milk
1 1/2 cups powdered sugar ; sifted
1/2 teaspoon vanilla
-= Instructions =-
Chocolate Glaze: In a saucepan cook and stir 3 tablespoons butter ormargarine, 2 tablespoons unsweeteened cocoa powder, and 2 tablespoons milkuntil mixture comes to a boil. Remove from heat. Stir in 1-1/2 cups siftedpowdered sugar and 1/2 teaspoon vanilla until smooth.

MAPLE FROSTING
1/4 cup Butter or margarine -- softened
2 1/4 cups Sifted powdered sugar
2 tablespoons skim milk
3/4 teaspoon maple extract
MAPLE FROSTING: Cream butter; gradually add 1 cup powdered sugar, beating well at medium speed of an electric mixer. Add remaining sugar alternately with milk, beating until smooth enough to spread. Add maple extract, and beat well.Yield: about 1 cup.

One of my friends emailed this one to me, she said a friend used it on a carrot cake she recently made. It used regular cream cheese and butter in the version she sent me, but I changed those ingreidents to make it more healthful and to fit close to what I was looking for.
Toasted Pecan Cream Cheese Frosting
1 8 oz pkg. fat free cream cheese, softened
1/4 cup margarine, softened
1 16 oz pkg confectioners sugar
1 cup chopped toasted pecans
1 tsp vanilla extract
2 to 3 tsp milk
Beat cream cheese and margarine with an electric mixer till creamy. Gradually add confectioners sugar beating till fluffy. Stir in the pecans and vanilla. Stir in 2 tsp milk and more if necessary. Stir till of spreading consisitency. Makes 3 cups

Orange Butter Frosting
2 tbsp butter
2 cups confectioners sugar
3 tbsp milk
1/4 tsp grated orange peel
1/4 tsp orange extract
a few drops lemon extract
Work butter with spoon till very soft. Add sugar gradually beating well and thinning with the milk till of right consistency to spread. Add orange rind and flavoring.

Came across a few glazes; I've tried the Java Jolt and the Cinnamon Toast one and they were both great!
Java Jolt Glaze
Whisk together 1 cup confectioners sugar and 1 tsp coffee dissolved in 2 tbsp milk.
Cinnamon Toast
Whisk together 1 cup confectioners sugar, 2 tbsp milk, and 1/2 tsp ground cinnamon
Tropical Orange
Whisk together 1 cup confectioners sugar, 2 tbsp orange juice and 1 tsp grated orange zest

Here is another good Orange Cream Frosting
4 oz cream cheese, softened
1/4 cup butter, softened
1/2 tsp orange extract
2 cups confectioners sugar
In a medium bowl beat cream cheese and butter till creamy; using an electric mixer. Beat in orange extract. Gradually beat in confectioners sugar. Makes 1 1/2 cups

Caramel Glaze
1 1/2 cups packed brown sugar
1/2 cup butter
1/2 cup pecans, chopped
3 tsp milk
In a small saucepan, combine all ingredients, Bring to a boil over medium high heat and cook till temperature reaches 234 degrees on a candy thermometer, stirring occasionally. Makes about 2 cups
