1 pinch saffron throeads
1/4 cup nonfat milk
1 tbsp nonfat milk powder
1 tsp vegetable oil
3 egg whites

Crush saffron threads to a powder with the back of a spoon. Add milk and stir to dissolve saffron. Add nonfat milk powder and vegetable oil. Beat egg whites lightly with a fork. Add milk mixture to egg whites and beat till well blended. Cover and store in refrigerator up to 3 days. Stir well before using.

Here is another version of:

Homemade Egg Substitute

2 large egg whites, lightly beaten
1 tbsp nonfat dry milk powder
1 tsp canola oil
4 drops yellow food coloring

In a bowl whisk the egg whites, milk powder and oil till well blended. Add food coloring. Makes 1/4 cup egg substitute which is equivalent to 1 large egg

Homemade Egg Substitute


3 egg whites
2 tbsp instant nonfat dry milk powder
1 tsp water
3 drops yellow food coloring

In a small bowl, combine all ingredients; mix well. Use as a substitute for eggs. Yield: 1 serving (equivalent to 2 eggs).
