View Full Version : Hungarian Goulash Soup

4 medium onions, peeled & chopped
2 large cloves garlic, crushed
1/2 cups olive oil
3 1/2 tbsp Paprika
3 lb lean Beef Chuck
2 large tomatoes, peeled & chopped
2 tsp caraway seeds
1 1/2 tsp dried marjoram
1 tsp lemon peel, minced
8 cups Water
2 tsp salt
1/2 tsp pepper
4 medium Potatoes, peeled & cubed



Cut chuck into 1" cubes. Saute onions and garlic in oil in a large kettle till tender. Stir in paprika and cook 1 minute. Wipe beef cubes till dry. Brown cubes, several at a time, on all sides. Add tomatoes, caraway seeds, marjoram, lemon peel, water, salt, and pepper. Bring to a boil. Lower heat and cook slowly covered, 45 minutes. Add potatoes and continue to cook about 20 minutes longer, tilll potatoes are tender. Serves 10.

Cat do you serve this with some kind of noodles? This looks like something dh might like.Thanks!

We just eat it as a soup, I guess you could leave out some of the water to make it thicker and serve it over noodles; I haven't ever done that, but it would probably work; let me know if you try that.
