1 spahetti squash
1/2 cup water
3 tbsp butter, melted
1/4 cup chicken broth
1 tsp fresh thyme leaves
1 tsp fresh oregano leaves
1/4 tsp salt
1/2 tsp pepper
Heat oven to 350 degrees; cut squash in half lengthwise and remove seeds with a spoon. Put squash halves cut side down in a roasting pan; add water and cover with foil. Bake 1 hour or till squash is fork tender. Remove from oven and keep covered.
In a bowl combine butter and chicken broth and heat in microwave for 1 minute on HIGH. Remove thyme and oregano leaves from stems and add to butter/broth mixture. Using a fork, shred the squash into strands into a bowl and add sauce, salt & pepper and serve. 6 servings
