1/2 cup chopped peeled apple
2 tbsp shredded cheddar cheese
1 tbsp dry bread crumbs
1/4 tsp salt
1/8 tsp pepper
2 boneless skinless chicken breast halves
1/4 cup unsweetened apple juice
1/4 cup water
1 tbsp margarine, melted
3/4 tsp cornstarch
1 tsp cold water
1/8 tsp paprika
In a small bowl, combine the apple, cheese, bread crumbs, salt and pepper. Flatten chicken to 1/4" thickness and top with apple mixture. Roll up and secure with toothpicks. Place in an 8" square baking dish coated with nonstick cooking spray. Pour apple juice and water over chicken and brush with butter. Bake at 350 degrees for 25 to 30 minutes or till chicken juices run clear. Discard toothpicks. Transfer pan juices to a saucepan and bring to a boil. Combine cornstarch and cold water till smooth and stir into pan. Cook and stir till thickened about 2 minutes. Pour over chicken. Sprinkle with paprika. 2 servings.
