1 cup raisins
1 cup diced dried fruit
2 cups water
2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground nutmeg
1 1/2 tsp ground cinnamon
egg substitute equivalent to 2 eggs
1 cup unsweetened natural applesauce
2 tbsp liquid sweetener
3/4 cup vegetable oil
1 tsp vanilla extract
1/2 cup chopped nuts
Combine raisins, fruit and water in a saucepan and cook uncovered till water is evaporated and fruit is soft. Set aside to cool. In a large mixing bowl combine flour, baking soda, salt, nutmeg and cinnamon. In another bowl combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and reserved fruit mixture. Stir into dry ingredients and blend thoroughly. Pour into a greased 10" fluted tube pan. Bake at 350 degrees for 35 to 40 minutes or till the cake tests done.
