2 smoked ham hocks
1 quart vegetable broth
1 1/2 cups sliced carrots
1 1/2 cups sliced celery
1 medium onion, diced
1/2 teaspoon dried thyme
1/4 tsp ground black pepper
2 cans (14.5 oz each) diced tomatoes
1 cup frozen baby lima beans, cooked
1/2 cup corn kernels
2 to 3 cans (15 oz each) white beans
salt & pepper to taste

In a 6 quart slow cooker, combine ham hocks, vegetable broth, carrots, celery, and onion. Cover and cook on HIGH for 4 hours or LOW for 8 hours. Skim fat from top of soup. Remove ham hocks from soup Add remaining ingredients along with salt and pepper and continue cooking on HIGH for 30 minutes to 1 hour.
Serves 8 to 10.
