View Full Version : Grilled Portobello Mushrooms

1/2 c finely chopped red bell pepper
1 clove garlic, minced
1/4 c olive oil
1/2 c grated parmesan cheese
1/2 t salt
1/2 t ground black pepper
1 T Zesty Italian Dressing
1/2 c finely chopped onion
4 Portobello mushroom caps

Preheat grill for medium heat. In a large bowl, mix the red bell pepper, garlic, oil, onion, salt, dressing and ground black pepper. Spread mixture over gill side of the mushroom caps and top with grated parmesan. Lightly oil the grill grate. Place mushrooms over indirect heat, cover, and cook for 15 to 20 minutes. Can also be baked in the oven at 350 for 15—20 minutes.
