I saw this on Paula's Home Cooking yesterday and brought back so many memories of Secret Sister parties and Christmas parties at church. This can be served as an hors d'oeuvre or as a meat biscuit for breakfast. I found the dough to difficult to manage until the heat from your hand warms the cold sausage meat.

Sausage Balls

1 (1-pound) package ground sausage
3 cups baking mix (recommended: Bisquick)
4 cups grated sharp Cheddar
1/8 tablespoon pepper

Preheat the oven to 375 degrees F. Spray a baking sheet with vegetable oil cooking spray.

Combine all ingredients in a large glass bowl. Mix well with your fingers. The mixture will be very crumbly. Form into 1 inch balls, squeezing the mixture so it holds together, then rolling it between the palms of your hands to form balls.

Place the balls on the baking sheet. Bake for 18 to 20 minutes or until golden brown. To prevent sticking, move the balls with a spatula halfway through cooking.

I love this recipe! Haven't made it in years because of DH's diet. I might try it with his Gimmie Lean sausage that I add lots of hot sauce to and use fat free cheese and see how it turns out. It would be a good "snack" for him to just be able to take a few and heat in the microwave. Thanks for reminding of them!~

De nada. I saw Paula making it on her show the other day and it brought back memories for me too! I love those! I think she even said that they were oldies but goodies. lol
