Do you have some recipes that can be made in about 30 minutes? Let's share them here so when we are short on time we have a place to go find that "quick" recipe! Here's one to get us started.


Pepper Steak

4 3/4 lb beef top loin steaks, cut 1" thick
1/2 of a medium red sweet pepper, cut into thin strips
1/2 of a medium yellow sweet pepper, cut into thin strips
1/2 of a medium green sweet pepper, cut into thin strips
2 tbsp olive oil
1 0.6 ounce envelope au jus gravy mix

Press cracked pepper into one side of each steak, using about 1/2 teaspoon pepper per steak. Place steaks on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat to desired doneness, turning once. In a medium skillet, cook pepper strips in oil till tender, but not brown. Prepare gravy according to package directions. To serve, top steaks with pepper strips and gravy. Makes 8 servings.

Here's a favorite recipe in my family. I modified it from a recipe from Family Corner (http://www.familycorner.com/forums). It's very easy. The sauce freezes well--I've taken this on vacation as a "kit" with a container of the sauce, a bag of prepped chicken and some flour.

HAWAIIAN CHICKEN WITH PINEAPPLE

3 boneless skinless chicken breast halves, cut in chunks
1/2 cup flour
Olive oil for the pan

SAUCE:

1/2 cup soy sauce
1/4 cup brown sugar
1/4 cup (approx.) pineapple juice
1 tsp (or more to taste) minced garlic
2 tsp sesame oil
2 tsp toasted sesame seeds

START THE RICE (and any side vegetables) BEFORE YOU BEGIN COOKING!!
Flour chicken chunks and brown on all sides in hot skillet. Meanwhile, mix up sauce ingredients. When chicken is brown, add the sauce and stir to coat. Let sauce come to a boil so it thickens up.

Serve over your favorite rice with pineapple on the side.

Dust chops with flour and brown in samll amout of oil. Top with sliced onions and add a small amount of water, broth or white wine cover & simmer 15 or 20 min.

Make stuffing mix per directions add pie filling mixing well add to fry pan and heat and serve.

I'm going to try the pepper steak recipe as soon as peppers come back in season. The ones at the supermarket now are shrivelled.

I'll come back soon whenever I can find a quick recipe to post.

I have so many. Crockpot meals are almost always less than 30 minute, but not from start to eating. But, I like them because I throw things in a crockpot prior to going to school. I come home and dinner is ready!

Here is a recipe that I made when we had all that company during Christmas. My mil asked me to email her the recipe as she loved it so much.

Hamburger Stroganoff

1 1/2 pounds ground beef
1 8-oz container sour cream
1 can cream of mushroom soup
1 small onion, diced
1 tablespoon or more diced garlic (in other words, garlic to taste)
salt and pepper to taste
1 package egg noodles
olive oil or oil of your choice to coat the noodles

Brown the ground beef, onion, garlic, and seasonings. Drain. (We use very lean ground beef, so I don't need to drain.) Add the sour cream and soup. Simmer on low for 10 minutes or less if you are time strained. As the beef browns, bring a large pot of water to a boil. Cook the egg noodles until al dente. Drain. Add about a tablespoon of oil to keep the noodles from sticking together. Serve the stroganoff over the noodles.

I personally like carrots or mixed veggies with this dish, which is just a few minutes of cooking in the microwave. You can also serve a tossed salad with this as well.

My husband just walked by and I was showing him all the good sounding recipes on this site and now he wants to try them all and says 'we have all the stuff to make those" and thinks we should try Barbszy's HAWAIIAN CHICKEN WITH PINEAPPLE for a start.

I think I will print out a week's menu with all the above recipes attached.

Have fun taste-testing all the recipes, Kricket!!

Here's another "under 30 minutes" way to do pork chops.

PREHEAT OVEN TO 450. (This is not a misprint)
4 boneless pork chops
2 tbl grainy mustard (like Dijon, or Polish mustard)
2 tbl red wine vinegar
1 tsp tarragon

Use a pan you can cover to bake these pork chops (or cover with foil)

Mix mustard, vinegar and tarragon. Place chops in pan and spoon some sauce onto each one.
Bake 10 minutes, COVERED.
Turn over chops and bake 10 more minutes, UNCOVERED.

Okay, so I read the recipe for stroganoff (which I will definitely make), and saw the reference, to the crock pot, so I decided to share my recipe of the two combined:

No-Peek Beef Stroganoff:

1 lb. stew meat, cut to 1-inch bites
1 can cream of mushroom soup
1 pkg lipton onion soup mix
1 can mushrooms, drained
1 cup sour cream (I use light)

Combine all ingr. except sour cream and let cook on low for 8-10 hours (will be ready when you come home from work!), but don't peek, or the steam and heat will escape! 15 mins before serving, add sour cream and heat through. Serve over egg noodles. SO GOOD!

Oh that one does sound good!

Here is another 30 minute one!

Cheesy Skillet Frittata

2 tbsp olive oil
10 new potatoes, sliced
2 cups broccoli, chopped *
1 tbsp onion, chopped
6 eggs
1/3 cup skim milk
1/4 tsp pepper
1 cup reduced fat Cheddar Cheese,grated


n large skillet on medium heat, heat olive oil till hot. Add potatoes, cover and cook 8 minutes or till almost tender. Add broccoli and onion. Cook 5 minutes till veggies are tender. Beat eggs and add milk, salt and pepper. Beat till well combined.Pour egg mixture over veggies in skillet. Sprinkle with cheese. Reduce heat to medium low and cover and cook about 10 minutes or till eggs are set.Cut in wedges and serve.



* If using frozen, chopped broccoli, thaw and drain well.

Uncle Ben's Fast & Natural Whole Grain Brown Rice with Spicy Shrimp
This came in a newsletter a couple days ago, made it and it was great~

1 cup Uncle Ben's Fast & Natural Whole Grain Instant Brown Rice
2 tbsp butter
1 red onion diced
4 cloves garlic minced
1/2 tsp salt
1 jalapeno pepper chopped
2 Tbsp. Worcestershire Sauce
2 1/4 cups water
1 lb. shrimp peeled and deveined


In a large skillet or sauce pan, sauté the onions and garlic in the butter until the onion is transparent and beginning to brown.Add salt, jalapeño, Worcestershire Sauce and rice; continue to sauté for about 1 minute. Add water and bring to a boil, reduce to a simmer and cover; cook for 25 minutes.After the 25 minute cook, stir in the shrimp and cover, cook for 5 more minutes. Serves 4

In the pork chops and apple stuffing recipe. I didn't say how much because it really depends on how sweet you like things. The orginal recipe called for the whole can but I useally use 1/2 to 3/4ths.
Another quick recipe is to brown & season boneless chops or chicken breast
drain a can of peaches saving the juice and make a box of corn or chicken stuffing mix using the peach juice as part of the water. Chops some peaches and add to the stuffing mix. The fruit gives it a fancy flavor. My family loves both & I love how quick and easy they are.
I'm sorry if my measurements are not right on target but that is how I cook. I will stop and measure if anyone wnat just let me know. Happy eating

Here is one if you want lasagna but don't fel like all the work~ tastes pretty good, but faster!

Lasagna Rolls

6 lasagna noodles
1 lb. extra lean ground beef
1 jar (15 1/2 oz) spaghetti sauce
1 tsp fennel seeds
1 pkg (8 oz) shredded reduced fat mozzarella cheese

Cook noodles according to pkg directions. In a skillet brown the beef and drain any fat; wipe out skillet return beef to skillet and stir in sauce, then fennel seeds and simmer 5 minutes. Drsain noodles and spread 1/4 cup meat sauce on each noodle and top with 1 1/2 tbsp cheese. Roll each noodle and put seam side down in a 9 x 9" pan. Spoon remaining suace over each roll and sprinkle remaining cheese on top. Bake at 400 degrees for 10 to 15 minutes or till heated through. 6 servings

Here is a quick throw together for a hot meal in a hurry!

Mix together:

4 cups diced cooked beef or pork
15 1/2 oz can chili beans in gravy
15 oz can tomato sauce
1 envelope chili seasoning
1/2 cup water

Heat for 15 minutes and its ready to eat!

Tonight we are definately having a 30 minute meal. We are having chicken and dressing casserole, green bean casserole, tossed salad, yams, whole berry cranberry sauce, and rolls. The chicken and dressing casserole is totally made in the microwave.

Chicken and Dressing Casserole

1 large can chunk chicken
1 stick butter or margarine
1 box stsovetop type stuffing mix
1 can cream of chicken soup

I 2-qt microwave safe casserole, melt butter in microwave. Add the rest of the ingredients. Stir. Microwave on high for 5 minutes. Stir. Microwave 3 more minutes.

I buy the can yams for the yams when I make this meal. After all, the point is convenience.

Here's another quick meal for busy nights

Chicken & Potato Saute

1/4 cup margarine
6 boneless chicken breast halves
1 medium onion, sliced
2 tbsp all purpose flour
1/2 tsp dried thyme
salt & pepper to taste
1 chicken bouillon cube
1 cup hot water
1 can (16 oz) whole potatoes, drained
1/4 cup red wine (you can use water)

In a large skillet melt margarine and saute chicken till browned on both sides. Add onion and garlic and cook about 5 minutes. In a small bowl combine flour and seasonings and disssolve bouillon in water and mix into flour mixture and pour over chicken. Cover and simmer 20 minutes; add potatoes and wine and heat through. 6 servings

15 minute Creamy Fettuccini Alfredo

1 8 oz pkg fat free cream cheese, cubed
3/4 cup grated parmesan cheese
1/2 cup margarine
1/2 cup skim milk
8 oz fettuccini, cooked & drained

In a saucepan stir cream cheese,Parmesan cheese, margarine and milk over a low heat till smooth. Add fettuccini and toss. 4 servings

Here's a good mufin recipe that only takes a short time to throw together and bakes for 15 minutes. This is one we like to have as a "road trip" breakfast.

Pumpkin Spice Muffins

1/2 cup canned pumpkin
1/2 cup milk
2 egg whites
2 cups baking mix (like bisquick)
1/4 cup sugar
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1/2 tsp ground ginger

Streusel Topping[B]
1 tbsp biscuit mix
2 tbsp sugar
1/4 tsp ground cinnamon
2 tsp margarine, softened

In a bopwl combine first three ingredients with a fork. Combine dry ingredients and add to first mixture and stir just till moistened. Spoon into 12 greased muffin cups. Combine streusel ingredients and sprinkle over muffins. Bake at 400 degrees 15 minutes or till lightly brown. makes 1 dozen

Topsy-Turvy Lasagna
Recipe from Speedy Suppers



3/4 lb. ground beef
28 oz. jar spaghetti sauce
5 cupscooked noodles
1 cup fat free cottage cheese
8 oz. pkg shredded mozzarella cheese

Brown ground beef in a skillet and drain. Stir in spaghetti sauce ans simmer 10 minutes. In a lightly greased 2 quart casserole combine noodles, ground beef mixture, cottage cheese and 1 cup of the mozzarella cheese. Top with the remaining mozzarella. Bake at 350 degrees for 15 to 20 minutes. Serves 8

Here's another quick main dish from my recipe file


Minute Steak Parmesan

1 egg white lightly beaten
2 tsp water
dash pepper
1/2 cup finely crushed saltine crackers
1/2 cup grated Parmesan cheese
4 cube steaks
2 tbsp margarine
1 can (8 oz) pizza sauce

In a shallow bowl combine the egg white, water and pepper and set aside/ On a plate combine cracker crumbs and cheese. Dip each cube steak into the egg mix and then coat with cracker/ cheese mixture. In a large skillet melt margarine and brown steaks on both sides. Add pizza sauce and simmer 3 to 5 minutes. 4 servings

This is good and a quckie!

Sausage & Wild Rice

1 pkg (6.2 oz) long grain & wild rice mix
1 can (15 oz) black beans rined & drained
1 can (11 oz) Mexicorn, drained
1/2 lb fully cooked smoked sausage cut into 1/2" slices

In a large skillet prepare rice according to pkg. directions. Add beans, corn, sausage and cover. Simmer 10 minutes or till heated through. 4 servings

This is a quick dish and even nie enough for drop in company (Makes you look like you really planned and worked).

Crab Alfredo

1 pkg. (16 oz) penne pasta
1/2 cup onion, chopped
1/4 cup margaine
2 cups fat free sour cream
1 can (10 3/4 oz) reducd fat cream of mushroom soup, undiluted
1/2 cup milk
1/2 tsp garlic powder
1/2 tsp Italian seasoning
1/2 tsp pepper
2 pkgs. (8 oz each) imitation crabmeat, flaked
1/4 cup Parmesan cheese, grated
2 tbsp fresh parsley, minced

Cook pasta according to pkg. directions. In a large skillet saute onion in margarine till tender. Whisk in next 5 ingredients till blended. Cook and stir till heated through, but do not boil. Stir in crab meat and heat through. Drain pasta and top with crab sauce and garnish with Parmesan and parsley. Makes 8 servings

That casserole sounds fabulous for when I have leftover chicken. I rarely buy canned chicken but leftover breast meat is something I cube and freeze. I'll give this one a try... thanks for the recipe. :)

Let me know what you think about it. I love to keep the ingredients on hand for those days when things get tremendously busy and I need to throw something together. I heat up some canned yams, make a greenbean casserole, and serve with cranberry sauce.
