2 cups cooked pinto beans
1 medium onion, chopped
1/3 cup flour ( you may need more)
3 tbsp olive oil
Mix beans, onion, and flour together. Drop by spoonfulls into a skillet of hot oil. Cook on low heat turning once till brown 10 servings

They are a version of Potato Patties
2 cups mashed potatoes (cold or warm works)
6 tbsp flour
1 egg
1/4 cup milk
3-4 tbsp oil
Add flour, egg and milk to potatoes and mix thoroughly. Batter should be doughy. Put oil in skillet and drop potatoes by spoonfuls into hot oil. Turn and pat into patties with a spatula and brown on each side. 12 servings

Cat lover, I have some leftover pinto beans. However, I noticed that this reciped doesn't call for eggs. How well do they hold together?

That sounds like something my dh would like, I like the potato patties been making those since I was a teen.

Cat lover, I have some leftover pinto beans. However, I noticed that this reciped doesn't call for eggs. How well do they hold together?
The flour holds it together. I guess because of the "thickened juice" that is usually with the leftover beans that combined with the flour always seems to work. I guess if you had problems you could add an egg, but I've never had to do that.

Thanks! I don't think I have enough left over this time (The GKs helped me eat them LOL) but I am definately going to make them next time.
