Just wanted to let you know that the Dollar Tree in my area has a whole line of decorations for a luau.

Check out Oriantal trading company for other great, cheap things.

When we went to a luau they had a roasted hog. It looked awful on the spit, but it was really delicious.
Also, any pineapple items work well. Also, pretty drinks with cutesy names-like Sunset, Volcano.
Be sure to greet all guests with Lei.

I'm glad to see this thread! Our theme for next years Blue and Gold (Cub Scouts) banquet is a Hawaiian luau. Even though it is 9 months away (Feb. 07) I have been gathering ideas for it. I want it to be very special since this is my dens cross-over ceremony to Boy Scouts. I feel like I need to start planning now during the summer months while decorations etc. are in abundance. I figure I will have a more diffficult time finding them in the winter months:confused: Great stuff at Oriental Trading Company like ajrsmom said. I will check out all links posted here and share any good stuff I find also. Dessert for our banquet it provided by the scouts and their dads in our annual Dad and Lad bake-off. Most usually try to go with the theme of the banquet. Here is a recipe I found that looks promising. It is a very pretty cake!

Hawaiian Cake

1 package (18-1/4 oz) yellow cake mix
2 Cups cold milk
2 packages (3.4 oz each) instant vanilla pudding mix
1 package (8 0z) cream cheese, softened
1 carton(8 oz) frozen whipped topping, thawed
1 can (20 oz) crushed pineapple, drained well
1/2 cup chopped maraschino cherries, drained well
1/2 cup flaked coconut
1/2 cup chopped walnuts

Prepare cake mix according to package directions, using a greased 15 in x 10 in x 1 in baking pan. Bake at 350 for 20-25 minutes or until a toothpick comes out clean; cool completely.

In a mixing bowl, combine milk and pudding mixes; beat in cream cheese until smooth. Fold in whipped topping. Spread over cooled cake. Top with the pineapple, cherries, coconut and walnuts. Refirgerate until serving. 16- 20 servings.

This is a fix ahead salad which might help as I'm sure you'll have plenty of last minute things to do!

Coconut Fruit Salad


1 fresh pineapple
3 oranges
3 pears
1 cup red seedless grapes
5 bananas
4 crisp apples
3 peaches
25 large marshmallows
1 cup of walnuts
1 cup shredded coconut


All of the fruit should be cut or sliced into bite-size pieces. Combine all the ingredients except the bananas, walnuts, and coconut. Cover and chill. Just before serving, mix in the bananas and walnuts. Sprinkle the shredded coconut over the top. Serves 25

Here is a sandwich that might work for you; it is from Quick Cooking


Luau Chicken Sandwiches

1 can (20 oz) sliced pineapple
1 tbsp brown sugar
1 tsp ground mustard
1 tsp garlic salt
1/2 tsp pepper
6 boneless skinless chicken breast halves
1/4 cup mayonnaise
1 tbsp Dijon Mustard
1/4 tsp. dill weed
6 kaiser rolls, split and toasted
6 lettuce leaves

Drain pineapple and reserve 1 cup juice and six pineapple slices. In a large resealable plastic bag, combine brown sugar, ground mustard, garlic salt, pepper and reserved pineapple juice; add chicken. Seal bag and turn occasionally. In a small bowl combine the mayonnaise, Dijon mustard and dill. Refrigerate till serving. Drain and discard marinade. Grill the chicken, covered over medium heat for 5-6 minutes on each side or till juices run clear. Grill pineapple slices for 1 minute on each side. Spread mayonnaise mixture on rolls. Top with lettuce, chicken and pineapple. 6 servings

I'm originally from hawaii and I have some of my favorite reicpes that I've collected from many sites over the years.

Oven Kalua Pig

Ingredients:
4 lb pork butt
1 tablespoon garlic powder
2 tablespoons Hawaiian salt (=rock salt)
1 bottle (3.5 oz liquid smoke
1 lb pork skin
5 1/2 cups water
8 ti leaves (use large spinach leaves

Directions:
Make several deep slashes around pork butt. Rub garlic powder and 1 tablespoon of the salt on pork. Pour liquid smoke over pork. Remove and discard most fat from pork skin. Add 1/2 cups of the water to a roasting pan, then line with foil. Lay 4 of the leaves on the foil. Place pork and skin on leaves. Cover with the remaining 4 leaves. Cover tightly with foil. Roast at 400 F for 1 hour. Lower temoperature to 375 F; cook for 4 1/2 more hours or until pork is easy to shred. In a large saucepot, bring the remaing 4 cups water to a boil. Add the remaining 1 tablespoon salt. Shred pork and cut skin; add to boiling water. Cover and cook for 15 minutes. Makes 8 servings


Easy Lumpia with Dipping Sauce
1 lb ground beef
2 cloves garlic, minced
1 large onion, minced
1 can (8 oz) water chestnuts, slivered
2 pkg (10 oz size) chop suey vegetables
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 tablespoon patis
2 tablespoons flour
1/4 cup water
40 lumpia wrappers
salad oil for frying



Procedure:
Brown beef well. Stir in garlic and onion; saute lightly. Add water chestnuts, vegetables, and seasonings; cook for about 2 minutes. Drain and cool thoroughly. Combine flour and water to form thin paste. To make rolls, place 2 tablespoons filling on a lumpia wrapper. Fold neatly like an envelope. Seal with paste. Heat oil to 375 degrees F. Combine remaining ingredients for sauce. Fry lumpia in oil until golden brown. Serve hot with sauce. Makes 40 lumpia.

Serve with dipping sauce of equal parts of shoyu, sugar and water. Or use a good bottle of sweet and sour sauce.



Ingredients:
3 broken fryers, split or quartered
1/4 cup catsup
1/4 cup shoyu
1/2 cup chicken broth
1/3 cup white wine
1/4 cup frozen pineapple juice concentrate.
pinch of fresh or dried ginger.
drop or two of worcestershire sauce.
Procedure:
Mix ingredients in bowl, brush over washed chicken splits. Grill over barbecue, turning and basting with sauce until it is done (about 40 minutes). For a real hawaiian picnic lunch, eat with sticky rice, macaroni salad.

* For the lumpia wrappers you can use the egg roll wrappers found in your local grocery store or you can make the following recipe..

Lumpia Wrappers

1 Cup flour
1 Egg
1 Cup water

Mix until smooth. Brush mix in heated pan. Lift carefully when dough begins to come away from pan.

* You could use a crepe pan to make this easier.

Maybe you can help me with a question! Several years ago my SIL roasted pork butt in foil in the ground; she has toyed with the idea of roasting a whole pig in the ground at some point. We've thought about doing where I live because I'm in the country and have land where it would not be a problem. Can you explain any details on this or links for it? Thanks!

I am curious as to the detailed instructions too. DH has eaten roasts and such at cookout at work. They dig a big hole, put a layer of coals on the bottom, cover with foil, put a wrapped roast in foil over the coals, then cover with more coals, then cover with dirt. DH said that they would start it the evening before and it was ready by the next day. He said they used a lot of foil and it was very good. I wonder if the way they do it in Hawaii is different?

Deora, that sounds exactly the way my SIL did it with the pork butt, but I've seen a whole pig roasted on a spit, but never in the ground, can you imagine the size hole that would be needed and the amount of charcoal; guess we'll just have to wait for rhi to answer us on this one! LOL

I doubt I'll have a ton of ppl come when I can ever have one. This year I'm having the tapas party. But, since I was a little girl, I've wanted to have a luau. Maybe after a graduation for a celebration.

Volcano Cake


You don't have to be a geologist to appreciate the wonder of this exploding volcano.

Party Idea: Experience explosive fun throwing a Science Party!
1 dome cake (baked in a 4-liter bowl, such as Pyrex)
1 dome cake (baked in a 2-liter bowl)
1 baked cupcake
3 to 4 cups chocolate icing
1 to 2 cups nondairy whipped topping
Lollipop Lava (recipe below)
1 cup sugar
1/2 cup light Karo syrup
1/4 cup water
Red food coloring


Step 1
Arrange the cakes and cupcake as shown, using frosting to secure them in place. Trim the top dome cake as shown, then cover the cakes with the icing. Just before serving, drop a cloud of whipped topping around the crown of the cake and add Lollipop Lava.

Step 2
Lollipop Lava: In a heavy saucepan, bring the sugar, syrup, and water to a boil (parents only). Continue boiling until the mixture reaches 295 degrees on a candy thermometer.

Step 3
Remove the mixture from the heat and stir in the food coloring until the desired shade is reached. (Tip: If you don't have a candy thermometer, melt crushed lollipops or hard candy in a saucepan over medium low heat.)

Step 4
Allow the liquid to cool one to two minutes before pouring it in randomly shaped spews and puddles onto a foil-covered cookie sheet. Let the lava cool completely before removing from the foil.

I love a luau!

We have a great place on the lake to have a party and I have thrown a big one every Labor Day weekend for the last 3 years! Most of my stuff came from Oriental Trading Company but recently found some good stuff at dollar tree. One cool thing I did last year was give everyone a name tag with their name written in hawaiian...I think I found it on that aloha site that was mentioned. They thought that was cool!

My menu usually consists of pork dishes and chicken, lots of veggies, rice and fresh fruits. I make fresh mango salsa. I search the web and always find great ideas.

Everyone wears tropical clothing and I have a bunch of grass skirts that I share with my close friends.(My husband even wore a coconut bra one year!) Everyone gets a lei to keep. I buy these all year round and stock up on them.

We play tropical music and decorate everything. We put grass skirts around the tables, light tiki torches and just anything tropical. Use fresh flowers too!

The first year my husband built me a tiki bar complete with thatch roof. It is soooo cool. I try to serve several different drinks in coconut glasses with umbrellas(both with spirits and without) the most popular have been mai tais and hurricanes.

This is great fun for all ages!

And don't forget to limbo!

I NEVER would have thought to do that! That is such an excellant idea. I also like the grass skirts, limbo, and tiki bar. Thanks for the ideas.

Fish in a Pond
This is from Familyfun magazine

1/2 cup low-fat cream cheese or cheese spread
Fish shaped crackers
4 celery ribs, stems removed

Scoop the cream cheese into a bowl. (You can tint the cream cheese with blue food coloring to make it look like a pond.) Place the goldfish in a separate bowl, or surround the "pond" with them. Let the kids dip the celery sticks into the cheese, then into the bowl of crackers to "catch" a fish. Serves 2
