2 T rum
1/2 c raisins
1/2 c water
2 c bread flour
1 T powdered milk
2 t brown sugar
1 t salt
2 t butter
2 T heavy whipping cream
1/2 t rum extract
1 egg, beaten
1 t oil
1 1/2 t active dry yeast
Pour rum over raisins in a small bowl, and allow it to stand for 30 minutes, then drain. Place ingredients in the bread machine in the order specified by your bread machine. Select the fruit setting for a 1 pound loaf, if you don't have the fruit setting, select the basic setting, adding the fruit 5 minutes before the end of the kneading cycle. This is an excellent bread, which is sweet and richer than the usual raisin bread. If you can plan ahead, try and soak the raisins overnight, it makes quite a big difference. Makes 1 lb loaf.
