2 pkgs (10 ounces each) frozen sweetened strawberries, thawed and undrained
1 pkg (1 3/4 ounces) powdered fruit pectin
1 tbsp grated orange peel
1/2 cup orange juice
3 1/2 cups sugar


In 3 quart saucepan, mix strawberries, pectin, orange peel and orange juice until pectin is dissolved. Heat to rolling boil over high heat stirring constantly. Stir in sugar. Heat to rolling boil stirring constantly then remove from heat. Quickly skim off foam. Immediately pour into hot, sterilized jars or freezer containers, leaving 1/2"headspace. Wipe rims of jars. Seal immediately and
cool. Refrigerate up to 1 week or freeze up to 3 months. Thaw before serving. 4 haf pints

wow this sounds really good. my bf and i were just talking about how making homemade preserves is a dying art. his grandmother knew how to do it but it was never passed on to his mom. he used to love to sneak into the garage and it by the jar. thanks for this. i'm going to try my hand at it on a long weekend this summer.

This is really good and so easy to make! What I like about this one is the strawberries are always available since it uses frozen sweetened ones so you can make this one at times other than when fresh strawberries are available. Let us know how you like it.
