6 Pounds Frozen hash browns with onion
Vegetable oil - as needed
Salt - to taste
Coarsely ground black pepper, to taste
6 Avocados
3 tbsp lemon juice
Sour cream, for garnish
Tomato salsa,for garnish



Cook potatoes over high heat till sauteed but not real brown. Add salt and pepper. Cut the avocado into 1/4" dice and fold in lemon juice. Add avocado to potatoes and cook till well browned; garnish with sour cream and salsa.

Does frying the avacado affect the color or flavor in any way?

Doesn't change the flavor any because it is cooked such a short time, you just "brown" to your desire, my sister barely cooks hers after the initial potato cooking so when she adds the avocado she just "warms" it up rather than browning it. The color also depends on how long you " brown" them.

I have never cooked avacados, but I have added them to cooked food, which was eaten immediately.

I have several recipes that they are cooked in although most people use them in salads and appetizers not cooked

I like mine raw. I can eat them in cooked food though.
