Now that Thanksgiving is over and Christmas is around the corner, what will you be serving for your Christmas meals? If you have company coming over, will you also serve special breakfasts and lunches and such?
We will have my DD and her family, in-laws, and maybe DS. So, I will probably make a fritatta for breakfast for one day. On other days, we'll probably get store-bought sweet rolls. For lunches, I usually just have everyone raid the fridge. Christmas dinner will probably be turkey, stuffing, mashed potatoes, giblet gravy, green bean casserole, bran dinner rolls, and a tossed green salad. My DD was disappointed when I made dump cake without her during Thanksgiving, so I will probably make it for dessert for Christmas for her. I usually have an Hors D'Oeuvres table, buffet style, set out as well so that everyone can graze. This year, I plan on serving armadillo eggs, queso dip and tortilla chips, cheese ball and crackers. I haven't decided what else to serve in that department yet.
I'm cooking for Christmas Eve, I'm not sure what 's on the mene yet. Last year it was lasange & salad. I'm thinking Ham or hot beef sandwiches. We usuall go to a late afternoon Mass and come home and eat. We will exchage with my married dd. We also buy for each other stockings, something small, cheap , used or free, that you found during the year. We love and laugh over these. Christmas morning will be dh, dd1 &2 and dgd and myself. We will have strata and fruit. I'll bring all the snacks and dessert to my db & sils for dinner & gift exchange. Next year dinner is my house and she supplies the reat. I love hearing how other celebrate and finding things to blend with ours.

I cook for Christmas dinner every other year. My DD can only do a full Christmas every other Christmas. However, when we do Christmas, I fully enjoy it since I have no classes and studying so I have time to spoil! lol Also, I can spoil.

I'm not sure what we are having for Christmas dinner, but I made pumpkin dinner rolls for Thanksgiving and have been asked to make them again for Christmas! We are to go to a dinner at my uncle's on the 23rd and then we usually have dinner at our parent's on Christmas.

We usually go to MIL's for dinner, so I cook for Christmas Eve. Not a huge meal, but something festive. This year will be cornish hens--the kids love having their own "chicken" lol!! For Christmas morning, I make stuffed French Toast after opening gifts.

We are having lasagne with salad and breadsticks.
My DH has to work that night so it will be like a regular night for us.
He is off on Christmas Eve but we usually don't do anything special for dinner on that night either.

Sounds like something the Mexicans or Mexican-Americans would have for Christmas dinner. They don't usually have the turkey and fixins, but rather menudo and tamales for their Thanksgiving dinner. You maybe yours will be an Italian Christmas dinner. lol

We got a call today from my in-laws and they are bringing a brisket. So, we are changing the menu up a bit.

On Christmas day my DH's parents will be with us, so I'm cooking for 7.
We'll be having a big treat--filet mignon. I got one on really good sale ($5 per pound) a couple of weeks ago and froze it. We did this last year and it came out delicious.
Not sure on the sides; I might just make baked potatoes or sweet potatoes (whichever each person wants--I have plenty of both) and a little pan of noodles for the 2 kids who don't care for potatoes.
Possibly some homemade rolls, if I get to them. Our schedule might be weird this year.
Fresh green beans.
For appetizers, shrimp ****tail, cheese and cracker platter, carrots and dip, chips and pretzels.
Dessert--undecided. DD might want to make a cake. We saw a cute one someplace with fruit by the foot, tied up to look like a bow on a present. She could do that.

How do you cook your filet mignon? I would love to try to cook it but with the price of it, I would hate to ruin it.
I have seen the cakes made with the fruit BTF. They are soooo cute!

I am not a big steak person, but when I do eat it, I like filet mignon. I wrap bacon around mine, if it doesn't already come wrapped. Then, I grill it outside until to my desired doneness. You really cannot ruin filet mignon. You can also bake it or sautee it.
I would be curious as to how you fix yours Barb.

I buy it as a big roast and leave it whole. I season the outside with coarse salt and ground pepper. I roast it on the rack in my Nesco roaster (you could do it in the oven but I would tent it with foil and use a roasting pan with rack). I think I roast it at around 325, and I use a meat thermometer to signal doneness. I highly recommend those digital probe-style meat thermometers. I don't have to keep opening the lid to check the meat since the display is OUTSIDE. I can't remember what the correct temperature is for medium-rare; I looked it up in Joy of Cooking last time.

Barb, you can buy filet mignon in roast form?

DeBora, that's the way our supermarket carries it. I think they will butcher it into steaks if you ask them to, but I like it in roast form. It was much easier to cook that way.

I always make Christmas dinner for my family. I will make sweet rolls for breakfast, they will be store bought, I have never tried to make them myself LOL. We will have all kinds of things to snack on through the day. And for dinner I am baking a ham with mashed potatoes, gravy, corn, green bean casserole, pistachio salad, dinner rolls. For desserts I'll make an apple pie and I think I want to try to make a pecan pie, I have never made one before. Does anyone have a good recipe?

Tonight, when I get back from picking my DS up from the airport and grab my GKs (DD and SIL are coming with in-laws) I am going to make them some Angel Cones (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_32515,00.html). They will be so cute!
