2 cups mint, packed
3 1/4 cups water
4 drops green food coloring
1 3/4 oz. powder pectin
4 cups sugar
Chop the mint into a saucepan. Add water and bring it to a boil. Remove pan from heat, cover and let stand 10 minutes. Strain mixture through cheesecloth to make 3 cups of mint juice. Add coloring and pectin. Bring mixtuire to a boil over high heat, stirring constantly. Stir in the sugar and keep stirring to prevent sticking or burning. Stir constantly and return to a full rolling boil. Keep stirring while you boil 1 minute. Remove pan from heat. Skim foam from surface with a metal spoon and ladle jelly into hot sterilized jars to within 1/8" of the rim. Wipe drips off inside and outside of jars. Seal with hot lids and screw bands. Invert jars for 5 minutes then turn upright. Makes 10 (4 oz) jars
