I got this from Alton Brown's show on Foodnetwork. Next time I am going to make it with rice instead of bread crumbs. I couldn't get flank steak, so I used skirt streak instead. Also, after I seared the meat, I cooked it all in a crockpot on high for 4 hours and it turned out fine! I just let the braciole braise in the tomato sauce.

Braciole

3 cups tomato sauce
1 1/4 cups flavored croutons
1/3 cup grated Parmesan
2 eggs
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh oregano
1 teaspoon finely chopped rosemary
1 teaspoon finely chopped thyme
1 clove garlic
1 pound flank steak, pounded to 1/4-inch thick
Olive oil, for brushing
Salt and pepper
Vegetable oil, for searing

Preheat the oven to 350 degrees F. Place the tomato sauce in a 9 by 13-inch baking dish and place in the oven to heat.
In a the bowl of a food processor mix the croutons, cheese, eggs, herbs and garlic until it forms a paste.

Brush the pounded flank steak with the olive oil and season generously with the salt and pepper. Spread the filling evenly over the meat. Roll tightly and tie with butcher's twine.

In a large saute pan heat 1 to 2 tablespoons of vegetable oil and sear all sides of the rolled meat. Remove from the pan.

Add to the hot tomato sauce, cover with a tin foil tent so that the foil is not touching the meat. Braise for 35 minutes or, up to 3 hours.

Oh that sounds really good! But of course DH couldn't eat it! Some of these good sounding recipes I'm just going to have to cook and package in small portions and freeze for me. As long as I spread it out eating them I could probably get away with it! LOL

Cat, is't flank steak low in fat? If it is, you could use it. You could probably use 3 egg whites instead of 2 whole eggs as well as low fat cheese so that your DH could eat it. I am assuming that he can eat olive oil? You could sear the meat in whatever oil he is allowed to eat.

4 oz of flamk steak has 14 grams of fat and that is broiled or grilled. DH can only have 30 fat grams per day so if you factor in other foods for the day that makes flank steak a no-no for him! And consider what 4 oz looks like; he'd starve! LOL I do sub lots of ingredients in things as you know, but when you factor in a whole day it makes it very difficult for him to eat meats as his protein.

Many years ago whne I first had to start this it was! There wasn't much even on the market to help which caused me to discover many things on my own from scratch. So in the long run that actually helped me. Now we eat very well, but "unusal" according to most people. We can never eat at someone else's house and if we do it has to be very selected (raw fresh veggies is an example). Most of the times I always contribute something if we try to go amd then that way he has something he knows he can nibble on. We also would eat at home before we go so he won't be hungry. Most peoplr think they are cooking low fat for him and for a most people it would be. But his situation is so weird and levels spike after one meal that we an't even takle the one time chance. So many poeple have no idea how fast 30 grams total fat climbs to the point. And his saturated level for an entire day is no more than 10 grams, cholesterol no more than 150 mg. So even if the "meat" is chicken breast, skinned there goes the cholesterol level very quick. So with all the aspects we have to stay under most find it impossible to cook that way. I respect others ways, but we have to respect the problem he has. Now it's like a normal way of cooking for me.

That is why I enjoy people coming by to eat sometimes, I can have something I crave once in awhile! LOL
