7 to 8 lb. bone in, smoked spiral cut ham half
1 cup maple syrup
3/4 cup brown sugar, packed
3/4 cup Dijon mustard
1/3 cup apple juice
1/4 cup raisins
1 tart apple, cored, peeled & thinly sliced
Remove and discard skin and any excess fat from ham. Place in a lightly greased 13 x 9" baking pan; insert a meat themometer in thickest part of ham. Combine syrup, brown sugar, mustard and apple juice and pour over ham. Set pan on lowest oven rack. Bake at 350 degrees, basting with drippings every 20 minutes for 2-1/2 hours or tilll thermometer reads 140 degrees. Let ham stand for 10 minutes; remove from pan to platter, reserving drippings. Use a bulb baster to remove and discard fat from drippings. To make sauce, heat drippings with raisins and apples in a small saucepan over low heat for 5 minutes. Serve sliced ham with warm sauce. Serves 12.
