Oven: 350
35 Minutes
1/4 c butter
1 c celery, chopped
1 c green onions, chopped
1-1/2 c uncooked rice
2 c chicken broth
1-1/3 c orange juice
2/3 c raisins
1 T orange zest
1 t salt
1 can mandarin oranges (opt)
Melt butter in baking pan or skillet. Add celery and onions and sauté until tender. Stir in rice and continue cooking until rice is golden brown. Blend in chicken broth and orange juice. Heat to boiling. Stir in raisins, orange peel, salt and mandarin oranges if using. Cover with tight lid or foil. Bake. Serve with pork roast or pork chops.
