Oven: 400
1 Hour
2 eggs
2 c fresh bread crumbs
2 c grated carrots
4 cloves garlic, minced
1 t each ground ginger and salt
1/2 t pepper
6 thinly sliced green onions
2 lbs lean ground pork
1/4 c hoisin sauce
In large bowl, whisk eggs. Mix in bread crumbs, carrots, garlic, ginger, salt, pepper and 3/4 c green onions. Mix in pork. Pack into 8 x 4 in. loaf pan, mounding top. Spread hoisin sauce over top; roast in oven about 1 hour. Sprinkle with remaining green onions. Makes 8 servings.
