Oven: 375
8—10 Minutes

Nonstick oil spray
8 large eggs
1/2 c whole milk
1/2 t freshly ground black pepper
1/4 t salt
4 oz thinly sliced ham, chopped
1/3 c freshly grated Parmesan
2 T chopped fresh parsley

Preheat the oven. Spray 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.

Pondlady, I like this idea. I LOVE frittatas and while I am away at school, I cannot make them in my little RV oven.

Thermometer broken? Had a broken thermometer in our camper before we bought this trailer. Lived with it, never did use the oven LOL. Now I have a brand new trailer and everything works....LOVE IT !!!

No, it is just small. The frying pans that I could use to make regular frittatas won't fit in the oven. RV ovens are small and the frying pans are too big with the handles that I cannot remove. I hope that makes sense.

I understand, used to have a camper with a small oven. This year we bought a new trailer and it has the bigger oven. I can fit a regular cookie sheet in it.

I am going home probably tomorrow morning. I sure will enjoy my large kitchen, stove, and oven. lol

These sound like another good "road breakfast" for DH and me with a few substitutions for DH; thanks for sharing!

A similar thing can be done with pre rolled puff pastry.
Just cut round with a cutter and pour the egg mix on top and cook as recipe.
Could also be done with sliced bread with the crusts cut off and cook as per recipe. The kids love these for dinner with a salad or breakfasts.
